There are many ways to celebrate the apple, from stories about history and culture, visiting your local orchards, or creating a tasty treat with your favorite apple! Let's talk about some of the great ways you can use apples in your meals!

Homemade Applesauce
Do you have extra apples in your house that may not get eaten before they go bad? This is a great recipe to help use those apples up! You can eat it plain, spoon it into yogurt or use it for baking other dishes. It is a delicious healthy snack for the whole family!

Apple Corn Chili
This quick-fixing chili, with a base of sautéed, puréed red apples and yellow corn, is so flavorful that you'd never know it's low in fat and sodium. We feature it with chicken, but it can be made vegetarian by omitting the chicken and bouillon and substituting water or vegetable stock.

Northwest Apple Salad
This recipe is very versatile. You can use any kind of apple you enjoy in this recipe. Feel free to replace the walnuts with any nut of your choice, you can even use cranberries versus raisins. Toasting nuts can make them more flavorful. In a small skillet over medium heat, toast nuts until golden brown and fragrant about 2 minutes. Watch closely so they do not burn, let cool before adding to your salad.

Meet Kristine Demeter, the new Lead Nutritionist/ Regional Program Coordinator for Cornell Cooperative Extension Association of St. Lawrence County SNAP-Ed Program!
Kristine received her Bachelors of Science in Community Health from SUNY Potsdam in 2016, she then went on to complete her Masters of Science in Community Health and graduated in May of 2018. In the fall of 2016 Kristine was a graduate intern student at CCE. Kristine after graduating with her Masters came to work for Cornell Cooperative Extension Association of St. Lawrence County SNAP-Ed Program in November 2020 as a Nutrition Educator.
Kristine will be a wonderful addition to the administration side of SNAP-Ed, providing direction, organization, coordination, and management of assigned aspects of the SNAP-Ed Program, including workshop development, professional development opportunities for staff, digital learning outreach efforts, and communications with key community partners. Kristine will also continue in the field to provide community nutrition education.
In Kristine's spare time she enjoys spending time with her family, friends, and pets. She enjoys being outdoors, kayaking, and staying physically fit. She is passionate about SNAP-Ed and you see that in her daily life and lifestyle even outside of work.

If you need help applying for SNAP, call or email a Nutrition Outreach and Education Program (NOEP) Coordinator. NOEP Coordinators tell you if you may be eligible for SNAP, answer any questions you may have, and help you complete and submit your application. It is free and confidential.
