Our day-trip took us to Middlebury and LedgEnd Farm. The farm raises Fallow deer, which are native to Europe and Mesopotamia. They are small, spotted deer with palmated antlers (much like a moose). Their meat is fine-grained, tender, and flavorful. Chefs around the world consider Fallow deer to be the premier venison. The 500-acre farm is situated on what was an island in the old Champlain Sea, and extending down to the old lakebed. The other day, Kay made a variation of Shepherd's Pie (with ground venison), let us know if you want the recipe, but they’re easy to find, and they’re all good!
The difference between cottage pie and shepherd's pie is that Shepherd's pie is made with lamb (shepherds look after sheep) and is normally covered with mashed potatoes. Cottage pie is made with ground beef and is normally covered with sliced potatoes. The potatoes are said to resemble the tiles on a cottage roof.
