Dixie Style Pork Chops
Ingredients
8 Thick (3/4in) pork chops bone in or boneless works too
1/2 tsp salt
1/2 tsp sage
4 tart green apples cored cut in rings
1/4 Cup brown sugar
2Tbs Flour
1 Cup hot Water
1 Tbs Vinegar
1/2 seedless raisin
2 Tbs oil
Directions (Time prep 20 minutes)
1. Brown Chops in oils both sides and place in Baking pan arranging apple slices on top
2. Prepare gravy using fat/juices add salt, sage brown sugar flour vinegar and hot water and bring to boil over med/high heat
3. After it thickens add raisins to the gravy and pour gravy over chops
4. Bake in over for 1 hour at 350

The back label says “American,” which suggests some of the grapes were grown outside California, but the winery website says the chenin blanc (80 percent) was from Clarksburg, and the viognier (20 percent) came from Lodi, both in California. Here it is: A quintessential Sassicaia that represents the excellence of the vintage and also respects the unique taste profile of this distinguished Tuscan blend of Cabernets Sauvignon and Franc. The Tenuta San Guido 2021 Bolgheri Sassicaia offers impeccable balance, excellent freshness and absolutely no signs of over-ripeness. The fruit balance is ideal with a hint of crunch and lasting tension from pulp and skins. The tannins are deftly managed with firm grip and enough velvetiness to add volume and length. There is no greenness on the bouquet that instead offers mulled herbs and spice, with cinnamon and clove, layered delicately between mostly red and some purple berry fruits. Redcurrant, blueberry, sweet pomegranate and Rainier cherry run strong in this vintage. A fragrant hint of heritage rose emerges with time. The oak tones are geared toward gingerbread, hazelnut, cigar, sandalwood and something like a grilled sweet red pepper. To the palate, it offers nice weight with no heavy glycerin, and a rinse of acidity that adds to the wine’s natural energy, brightness and viscosity. That marked freshness opens the wine up to long aging potential, but you still need to give it more time in bottle.

James Suckling 100 Points - The is very refined and elegant with a fine-tannined line running through the center of the palate. It’s very intense and precise. Full-bodied with great, tight fruit. This is subtle and complex, then it opens on the palate and shows incredible depth and intensity. Great length, going on and on for minutes.
Robert Parker's Wine Advocate 99 Points - The 2019 Haut-Brion is a blend of 48.7% Merlot, 43.2% Cabernet Sauvignon and 8.1% Cabernet Franc, harvested from the 10th of September to the 3rd of October. The estimated label alcohol degree is 14.5%. Displaying a deep garnet-purple color, it comes off incredibly shy and reticent to begin, needing considerable coaxing to reveal notes of dark chocolate-covered cherries, blackberry preserves, woodsmoke and sandalwood, before launching into a full-scale fireworks display of iron ore, cumin seed, redcurrant jelly, red roses, oolong tea and Sichuan pepper scents plus a waft of cardamom. The medium to full-bodied palate delivers the most exquisitely ripe, finely grained tannins with a lively backbone of freshness supporting the tightly wound, earth-laced black fruit layers, finishing very long and minerally. This is one of the most finely structured, tightly knit wines of the vintage. Given time, I wouldn't be at all surprised if it goes atomic and eventually takes top place for the vintage.

Jeb Dunnuck 96 Points - More serious, and one of the wines of the vintage, the 2011 Cabernet Sauvignon (100% Cabernet Sauvignon) has uncommon concentration and depth in the vintage, as well as a broad, structured profile that will allow it to age gracefully. Loaded with sweet crème de cassis, exotic spice, licorice and graphite, it's a full-bodied, elegant and classically styled effort that has nothing out of place, fine, building tannin and a rock star finish. It will be approachable at an earlier stage than most vintages, yet still have two decades of longevity.
Always producing some of the finest Bordeaux blends in any vintage, owners/winemakers Alex and Paul Golitzin continue to keep Quilceda Creek at the pinnacle of Cabernet Sauvignon in Washington State with these 2011s and 2012s. Looking at their 2011s, yields were down close to 40%, and this shows with the wines possessing gorgeous depth, richness and concentration. While Paul feels his 2011s are just as concentrated as his 2010s, the overall impression between these two cool vintages is distinctly different and the 2011s show much more up-front, perfumed and supple profiles. As always, the tannin management here is second to none and while the 2011s have plenty of tannin, you have to hunt for it as they're incredibly polished and silky. These 2011s will be approachable at an earlier stage than normal, yet evolve gracefully on their overall balance. Looking at the 2012s, I was blown away by these samples, which were shipped to Colorado and then followed for multiple days. Described as a "good" and "welcome" vintage by Paul, the wines have blockbuster levels of concentration and richness, yet stay beautifully pure, elegant and focused. They're up there with the creme de la creme from this fantastic estate. Don't miss them. Alcohols here are in the 15.5 range (with the 2011 around 15), but you'd never know it from tasting the wines. The big news at this estate is that with vineyard-owner Paul Champoux retiring, the Golitzin's were able to increase their ownership in the Champoux Vineyard from 40% to 66%. Other owners here include Powers, Andrew Will and Woodward Canyon. How this effects the overall production levels is yet to be determined, but a top producer getting more grapes from a top site is never a bad thing from a consumer standpoint. Drink: 2014 - 2034.

It begins with striking aromas of fresh blackberries, blueberries and dark plums that are laced with fresh spring florals, mocha, sweet exotic spices, graphite and gravel nuances all taking shape. The palate is full-bodied and displays a remarkable combination of power and elegance throughout. This is beautifully structured and extremely expressive, as it possesses outstanding depth and concentration all they way through the long, finessed finish. Year after year, the Columbia Valley Cabernet is one of the most impressive wines, and there is no exception here, as it combines all the wonderful qualities of the 2020 vintage from Quilceda Creek into one expression. This is fantastic already and readers will be in for a real treat, as this simply marvelous wine will continue to deliver the goods for years to come.
Owen Bargreen 99 Points - The outstanding new 2020 Quilceda Creek ‘Columbia Valley’ Cabernet Sauvignon was sourced mainly from the Champoux Vineyard (90%) with the remainder coming from the Mach One Vineyard. This reveals very pretty black rose petals with blueberry compote, sandalwood, mocha, tar and anise notes that all meld in the glass. The palate is utterly seamless, as this glides throughout the drinking experience. Huckleberry pie, dark chocolate covered blackberry and black raspberry coulis combine with loamy soils. This is super refined and elegant Cabernet Sauvignon that is already beautifully evolved and will provide drinking enjoyment over the next fifteen to twenty years. Drink 2022-2039

About Sugar Bear Ice Cream
From Emily! Ice cream has such a beautiful way of bringing out the child in us all, no matter our age. I think that's pretty special. I started making ice cream when my kids were tiny and I was immediately hooked. It all started with one small machine. Then I got a bigger machine and then, an even bigger machine. I began studying ice cream and collecting every recipe I could find, and what started as a hobby turned into an all-consuming passion. I enrolled in the Ice Cream Short Course at Penn State, which has been running for over 125 years and draws people from around the globe. Upon graduation, I started SugarBear, set up shop and never looked back.
I focus on flavors that are built around locally grown or created ingredients. My goal is to celebrate food, small business, and community. Each flavor is made from scratch and reflects the authenticity, joy and creativity of people who live and work in Charlottesville, VA.
