Summertime Cocktails - Check this out!

Now that we are in the heat storm of northern California summer I wanted to share a couple of wine cocktails I use to keep cool. Both of these feature our Vin Gris of Cabernet Sauvignon.


Rose Cosmopolitan


In a shaker filled with ice, add 2 ounces Ketel one, 1/2 ounce lemon juice, 1/2 ounce agave, a splash of pomegranate, and 2 ounces of Vin Gris. Shake until the ice is nearly silent in shaker and then strain through fine mesh into a coupe glass.


Rose Margarita


In a pitcher, add 1 cup light agave syrup, 1 cup lime juice, 1 cup tequila, and 1 bottle rosé. Add ice and stir well. Pour into salted rum margarita glasses and garnish with fresh watermelon slice.

From Fruit to Wine, you wouldn't believe it!

So we now have fruit! Whatever will we do with it?  


Well... in the vineyard we've worked very hard to go from a rapidly growing vine to a flowering one (May). And in the last couple months, to a full blown fruit bearing plant. 


However, even with all this progress, the job is not over. The number one priority is to ensure the vine stays healthy enough to accumulate sugar inside those fruiting berries. The grape berries are green and hard now and during this next month we'll do all we can to ensure the sugar accumulation, as well as ensuring proper light infusion. This to aides in high quality grape growing for wine. 


So besides doing the standard farming practices of keeping a healthy plant, we also do some light manipulation to ensure bit of sunlight "kisses" the berries themselves.


The job is called leaf pulling, and we do some of this by hand, and the other part by a machine. We will also typically remove some leaves around the grape bunches on the opposite side of the hot afternoon sun. 


Check out these pictures below of the Petit Verdot next to the winery with their leaves pulled by hand and then see this Chardonnay done with a machine.
