Fun Food Friday

Long Beach Organic

Long Beach Organic plays a vital role in our community by donating a portion of their weekly harvest to the Laurén Chalmers '83 Beach Pantry. They are a major help to addressing food insecurity and promoting healthier eating habits. By participating in the plant sale, you not only contribute to the sustainability of local gardens, but support the essential work of the Giving Gardens, which directly benefits individuals and families in need. Join us in supporting Long Beach Organic's annual plant sale, dedicated to the Giving Gardens initiative! The Plant-R-Us Extravaganza has fun-filled events that include workshops and tours! Proceeds raised from the plant sale will be used to further develop and maintain the Giving Gardens program, ensuring that more fresh, nutritious produce reaches those who need it most.

Breakfast Protein Plate

RECIPE PROVIDED BY GIOVANNA QUEVEDO

Ingredients 

  • 1 to 2 eggs or alternate proteins
  • cup any canned beans
  • ½ cup any vegetables
  • ½ cup fruit (fresh or canned)

Optional Ingredients

  • Seasonings to taste: 
  • Salt, pepper and paprika
  • ¼ avocado
  • Toast


Directions:

  1. Rinse and slice vegetables. Cook in a pan or microwave until soft and add to a plate.
  2. Optional: Season vegetables to taste.
  3. Drain any liquid from the canned beans and heat in the microwave for 1-2 minutes.
  4. Cook eggs or an alternative protein to your preference in a pan or microwave and add to your plate.
  5. Rinse and slice fresh fruit or drain canned fruit.
  6. Assemble your plate.
