Join ASI as we dedicate and rename the beloved ASI Beach Pantry to the Laurén Chalmers '83 Beach Pantry. We will hear from our campus partners, administration, and Mrs. Laurén Chalmers followed by a ribbon-cutting ceremony March 8 at 11 a.m. at the Laurén Chalmers '83 Beach Pantry, formerly known as the ASI Beach Pantry. Save your spot when you RSVP at Events & Orgs.

LAURÉN CHALMERS

As an alumna of Long Beach State University (LBSU), Laurén Chalmers earned her Bachelor of Science degree in marketing in 1983. During her time on campus, she was an active member of Alpha Phi Sorority. She also dedicated her time to several charitable causes, including St. Margaret's Episcopal School and JSerra Catholic High School. Laurén holds a position on the Board of Trustees for the Orange County Museum of Art.


Here at the newly re-named Laurén Chalmers '83 Beach Pantry we would like to express our endless gratitude and excitement to be reaching new milestones.

Burrito Bowl Recipe

RECIPE PROVIDED BY GIOVANNA QUEVEDO

Burrito bowl served. For the full recipe refer to the recipe listed to the left.

Ingredients:

  • 1 cup rice
  • 1 can beans
  • 1 can corn
  • 1 can tomatoes
  • 1 cup vegetables of your choice
  • 2 cups water
  • Optional Ingredients:
  • Seasonings to taste:
  • Salt
  • Pepper
  • Garlic powder
  • Chili powder
  • ½ red onion
  • 1-2 cloves garlic (diced)


Directions:

  1. Rinse the rice under cold water until the water runs clear.
  2. Cook rice according to instructions on package, or follow these instructions:
  3. In a pot, add the rice with 2 cups of water.
  4. Bring to a boil, then reduce the heat, cover and simmer for about 18-20 minutes, or until the rice is cooked and the water is absorbed. 
  5.  While rice is cooking rinse beans and heat in a pan or microwave .
  6. Drain, rinse, and set aside canned corn and tomato.
  7. Heat vegetables and corn in a pan or microwave.
  8. Optional: season to taste.
  9.  In a large bowl, combine all ingredients and mix.
  10. Optional: dice red onion and garlic to add to the bowl, top with seasoning and any other ingredients you prefer.
  11. Enjoy and save any leftovers for another meal!

Saturday: 11 a.m. - 2 p.m.

Sunday: CLOSED


Curbside pick up by appointment.


The Pantry will have modified hours Friday, March 8 from 2 to 7 p.m.


Please remember to bring your student ID and your own bag when you shop at the Pantry!
