A Deep Dinner Divide

It’s that time of year, when we gather around the table and renew the debate— is green bean casserole a legitimate Thanksgiving side or just a midwestern girl’s hot dish dream?

 

Known for its creamy, salty, crunchy goodness, green bean casserole graces many a Thanksgiving table. There are those who dislike this contemporary holiday dish, seeing it as an intruder amongst the traditional greats like mashed potatoes and gravy, stuffing and cranberries.

 

I am in the pro-GBC camp and sing the praises of green bean casserole’s main ingredient—green beans! Although canned green beans are a little high in sodium and a little soft in texture, they retain the health benefits of fresh green beans as they are canned at the peak of the harvest. In Chinese medicine, green beans are considered sweet and neutral (not of a hot or a cold nature) and strengthen or tonify the yin aspect of the spleen and kidney. This means they aid in cooling the body by expelling heat. They are also helpful in expelling accumulated toxins as they strengthen the kidneys and make clearing inflammation from the body easier.

 

In Western medicine, green beans are viewed as a good source of fiber and are high in Vitamin K, a nutrient often prescribed along with Vitamin D to strengthen bones and prevent osteoporosis. The bones are where the body makes blood and in TCM are under the direction of the kidneys, so West and East agree, green beans for the win!
