Wild Fruitings Mushrooms now available in Daybreak Boxes!

Newly-added to the Daybreak Box inventory are mushrooms from Wild Fruitings in Augusta. Mushrooms add hardiness, richness, and that much-desired umami flavor to warm winter dishes we are all craving. If you haven’t gone beyond button and portobellas, but are ready to try something new, we have a few great options to check out! The best way to truly taste the unique flavors of a mushroom is to simply saute over high heat in butter (or sunflower oil) with a sprinkling of salt. Read below to learn about other culinary uses for a few of the varieties we carry.


Lions mane: this mushroom is well-known for its brain power-boosting abilities. It’s a crazy, sea anemone-looking mushroom with a texture similar to picked crab meat, so try it in breaded cakes or in a stir fry.

 

Oyster: Wild Fruitings grows a large variety of oysters, including golden, blue, black, pink, and phoenix. Their flavor is delicate, nutty, and varies slightly depending on the type. An interesting fact about oysters is that they were first cultivated in Germany for sustenance during WWI! Learn more about these varieties here.


Shiitake: if you’re just braving beyond the buttons, shiitakes are a good intro to the less common mushrooms. This one dates back to the 9th century CE in China, and wasn’t cultivated in the United States until the 1970’s. Since then it was boomed in popularity, topping the charts of most-consumed mushrooms second to the button. We love shiitake sauteed with woody herbs and shallots - save the stems for your next stock!

Gingerbread Cookie Recipe

From Maine Grains, this gingerbread cutout cookie recipe is full of nutty, hardy rye flour, spices, molasses, and all the flavors of the holidays. Rye is a thirsty grain, so make sure you allow your cookie dough to rest in the fridge for at least 12 hours so it hydrates and softens.


INGREDIENTS

3 1⁄2 cups Maine Grains Organic Rye Flour

4 tbsp cocoa powder and extra for rolling

1⁄4 tsp salt

3⁄4 tsp baking soda

1 tbsp ground ginger

1⁄2 tsp ground cinnamon

1⁄2 tsp ground cloves

1⁄4 tsp ground nutmeg

1⁄2 cup unsalted butter, room temperature

1⁄2 cup brown sugar

2 eggs

1⁄3 cup unsulphured molasses

Royal Icing using egg whites

1 egg white

1⁄2 tsp cream of tarter

1 1⁄2 cups confectioner’s sugar


DIRECTIONS

  • Preheat the oven to 350℉. Lightly grease cookie sheets, or prep with a silicone baking mat or parchment paper.
  • In a large bowl, sift or whisk together the flour, salt, baking soda, and spices.
  • In the bowl of your electric mixer (or with a hand mixer), beat the butter and sugar until light and fluffy. 
  • Add the eggs and molasses and beat until well combined.
  • Gradually add the flour mixture beating until incorporated.
  • Allow to rest in the fridge overnight.
  • Roll out the dough and cut shapes with your favorite cookie cutters.
  • Bake at 350°F for 10 minutes.
  • Let cool completely before decorating.
  • For the royal icing using egg whites:
  • Whisk 1 egg white, ½ tsp cream tartar and 1½ cups confectioners sugar, add more or less depending on the size of the egg white to get the desired consistency.

LongWoods Preserve in Cumberland

Longwoods Preserve in Cumberland is our newest farmbox pick-up site! Located just two miles south of the main intersection in Cumberland Center (2.5 miles north of the Route 9 rotary in Falmouth), the preserve offers our Cumberland community members a beautiful spot to pick up their Daybreak Boxes and engage with the farming and sustainable living opportunities offered here. If you have yet to visit this newly conserved land, we hope you take the time to explore one of their hiking trails, or enjoy a meal at their farm-to-table restaurant, Wander. A conservation easement, completed in partnership by Maine Farmland Trust and the Chebeague & Cumberland Land Trust now protects the new Longwoods Preserve and we couldn't be more excited to partner with them on our shared mission to bring more local food to the community!
