Ginger-Peach Soda
Ingredients:
2 cups seedless watermelon, chopped, plus more, to taste, cut into wedges, for garnish
1 small banana
3/4 cup fresh strawberries, hulled and halved
1/2 cup unsweetened coconut milk yogurt
2 teaspoons agave syrup or honey
1/8 teaspoon salt
Directions:
Step 1 - Line a baking sheet with parchment paper.
Step 2 - Freeze the chopped watermelon until completely frozen, at least 2 hours and up to 12 hours.
Step 3 - Cut the unpeeled banana in half crosswise.
Step 4 - Peel one of the banana halves. Reserve the remaining banana half for another use if you wish.
Step 5 - Place the frozen chopped watermelon, the peeled banana half, the strawberries, the yogurt, the agave, and the salt in a blender.
Step 6 - Process until completely smooth and creamy, about 1 minute. Make sure to scrape down the sides as needed.
Step 7 - Divide the smoothie between two glasses.
Step 8 - Garnish with the watermelon wedges and serve.
