Exploring Volcanoes 🌋

Last Tuesday, our Project Achievement students learned how volcanoes are formed, what causes them to erupt, and the difference between magma and lava! Students then built a mini volcano and mixed baking soda and vinegar, which caused a chemical reaction and mimicked an eruption.

We'd like to thank Thomas Kinaya for sponsoring last week’s Project Achievement activities as a CALC Kids Member! If you’d like to sponsor a week of Project Achievement or youth sports, become a CALC Kids Member today!

Cooking With CALC

On Wednesday, our Cooking with CALC clients created easy Veggie Quesadillas using ingredients such as black beans, sauteed peppers and onions, cheese, and whole wheat tortillas!

Clients also had the opportunity to help make the quesadillas themselves and experienced the simplicity of the recipe first-hand.

This session focused on the importance of incorporating protein into our diets. The nutrition educator and participants discussed all the different ways protein is used in our bodies - repairing muscle tissue, boosting our immune system, and more. To learn more about the importance of a balanced diet, please visit MyPlate.gov

Elderly Refugee Health Education

Last Thursday, we had the pleasure of welcoming Dima Tolla-Hanna to educate our Elderly Refugee Clients about the importance of maintaining and updating a medication list and how to communicate it with various physicians.

Our elderly refugee clients also had a Heart Healthy Fork and the Road session. They learned heart-healthy food choices and some chair yoga to increase their activity level. Participants also enjoyed a cooking demonstration and sampled cinnamon apple oatmeal after their exercise.

Because UCFS-CALC cares about our client's overall health, we finished the session off with an elderly client favorite - BINGO!

Mesopotamian Moves

Honoring Chaldean Heritage Month

April marks Chaldean Heritage Month! In 1961, CALC was founded by Chaldean women, driven by a mission to better the community from which they came. Without the hard work, resilience, and FAITH of our Chaldean founders, UCFS-CALC would not be where it is today. This month allows us to highlight the rich values and culture we inherited from the past, enjoy them in the present, and pass them on to future generations.

We'd like to highlight the exceptional work ethic of Chaldean entrepreneurs in our Mesopotamian Moves Series. Phil Mansour, a standout entrepreneur, is the CEO of All-Star Wine Imports and has been involved with UCFS-CALC as a long-time Member and supporter of our special events!

About Phil Mansour

Phil is a true All-Star in his professional life and calls on his Chaldean heritage for strength and guidance. Remembering his heritage, Phil emphasizes, "Being Chaldean is an identity that has been ethnically preserved for over 2,500 years. Ethics is a personal compass necessary to navigate the professional field."

For Phil, entrepreneurship is a journey of dedication and education rooted in his heritage. He advises future entrepreneurs, "Those who aspire to start their own businesses must spend an abundance of hours learning their craft before pursuing a business idea."

Phil Mansour's journey as an entrepreneur is greatly influenced by enduring struggle and strength instilled in him. Chaldeans have a history shaped by challenges and perseverance, traits Phil embodies in his professional ventures.
