Here at Daybreak we often rise before the sun, and rely on simple to prepare and nutrient-dense foods to help us get the day underway. 44 North Coffee and Forage Bagels are a staple in the Daybreak team kitchen keeping us fueled as we pack your orders. As we make a commitment to remember to eat a good breakfast daily, we invite you to do the same. New Partnerships Formed at the Ag Trade Show!

Thank you to those who attended our session at the recent Maine Agricultural Trade Show. We had a great turnout and shared the inside scoop on what we do (and YOU support!) to a room of growers and producers.

Breakfast Tacos Recipe

3 servings (2 tacos each)

Different every time, but consistently delicious, breakfast tacos check a lot of our busy-weekday-morning-breakfast boxes: quick and easy to prepare, packed with protein and flavor, and versatile enough to be eaten slowly while musing over the morning paper or running out the door.


Ingredients:

  • 6 slices bacon or 1 ½ cups cooked sausage crumbles (for a vegetarian version, swap out for sauteed veggies like mushrooms and spinach)
  • 1 russet potato, peeled, cut into ½” cubes 
  • Maine sea salt
  • Ground black pepper
  • 2 Tbsp butter
  • 6 large eggs, lightly beaten
  • ½ cup shredded cheese (we like State of Maine cheese for tacos!)
  • 6 Pachanga tortillas
  • Thirty Acre or Farthest Field Farm hot sauce


Directions:

  1. Heat cast iron skillet over medium-high heat
  2. Add bacon, sausage, and/or veggies (plus oil) and cook until done
  3. If cooking bacon: Transfer to a paper towel-lined plate, reserving excess fat in the skillet 
  4. If omitting breakfast meat: Transfer the cooked veggies to a bowl, and if needed, add more oil to the pan for potatoes
  5. Add potatoes to the skillet and cook, stirring often, until golden brown and crisp, about 12-14 minutes; season with salt and pepper, to taste
  6. Transfer to a paper towel-lined plate; keep warm
  7. Reduce heat to medium
  8. Melt butter in the skillet; add eggs, and cook, stirring occasionally, until they just begin to set (they should still be liquidy - don’t dry them out!)
  9. Stir cheese into eggs, and continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes; season with salt and pepper, to taste
  10. Assemble tacos and serve warm

Waldo County Bounty is hiring for a Food Access and Volunteer Coordinator! Daybreak Growers Alliance is a founding partner of Waldo County Bounty, an initiative that seeks to bolster food security in our own backyard. As part of this initiative, we work as a member of Waldo County Bounty to crowdsource funding to purchase crops from our partner farms and distribute them to over 22 hunger relief organizations and food access points in Waldo County.
