FRESH MILLED DURUM SPAGHETTI

Try your hand at homemade pasta with this delicious recipe by CGI's Chef Shannon. Durum has a nutty flavor and an earthy aroma.

It's also healthy and high in protein.

INGREDIENTS

  • 5 cups freshly milled durum wheat*
  • 2 tsps salt
  • 6 eggs
  • 2-4 tbsps water


*or substitute approximately 4 cups of pre-milled flour; we suggest semolina for best results 

INSTRUCTIONS

In a bowl, mix flour and salt until evenly distributed. Crack eggs into the bowl and slightly scramble them with a fork while incorporating the flour. Once the mixture is crumbly, place it on a table or parchment paper and knead it together. Slowly add 1 tablespoon of water at a time until the dough ball is smooth, but not tacky. Wrap the dough ball in plastic wrap and allow it to rest at room temperature for 30 minutes to 1 hour. Once rested, work with sections of the dough ball, keeping the remaining portion covered. Cut pasta to desired shape and cook for 3-4 minutes in salted, boiling water. Drain and toss with your favorite sauce.
