I tend to do some good cooking (& eating) in my spare time and so I thought it would be fun to include a recipe each week in our email newsletter! I hope you will try them and let me know how they turn out for you! Cheers!
Crab Quesadillas Recipe (Serves 6) Time: 30 Minutes
1/4 pound Butter -- Divided
3 Green Onions -- Finely Minced
1 teaspoon Fresh Chives -- Chopped
1/2 pound Lump Crabmeat
2 tablespoons Sour cream
1 teaspoon Fresh Dill -- Chopped
Salt -- To Taste
6 Flour Tortillas -- At Room Temperature
3/4 cup Monterey Jack Cheese -- Grated
1/2 cup Red And Green Bell Peppers -- Finely Chopped
Salsa
Guacamole
Sour Cream
Preheat the oven to 375F degrees. Reserve 2 tablespoons of the butter. Place the remaining butter in a sauce pan and melt over low heat. Add the onions and chives.
Saute until translucent. Remove from the heat and add the crab, sour cream, dill, and salt. Mix well. Spread the crab mixture on one half of each tortilla. Top with a sprinkling of the grated chese. Fold the tortillas in half and place them on a baking sheet. Brush the tops of the tortillas with the reserved butter. Bake for 5 minutes or until the tops are golden brown. Let rest for 5 minutes before cutting into quarters.
Serve with cheese, guacamole, sour cream, chopped peppers and salsa.

Previous vintage was a Top 100 Wine in the World and this one is a fantastic follow up! The grapes used to make this company Cru are produced in Pietrafitta area in Castellina in Chianti where we selected the best Sangiovese grapes from the oldest and best-exposed vineyards. The sensory associations that it evokes are complex and highly refined, gradually fading from fruity to spices and licorice. On the palate it is meaty, harmonious and very thick with a long aromatic finish. Organic!

About Sugar Bear Ice Cream
From Emily! Ice cream has such a beautiful way of bringing out the child in us all, no matter our age. I think that's pretty special. I started making ice cream when my kids were tiny and I was immediately hooked. It all started with one small machine. Then I got a bigger machine and then, an even bigger machine. I began studying ice cream and collecting every recipe I could find, and what started as a hobby turned into an all-consuming passion. I enrolled in the Ice Cream Short Course at Penn State, which has been running for over 125 years and draws people from around the globe. Upon graduation, I started SugarBear, set up shop and never looked back.
I focus on flavors that are built around locally grown or created ingredients. My goal is to celebrate food, small business, and community. Each flavor is made from scratch and reflects the authenticity, joy and creativity of people who live and work in Charlottesville, VA.
