NEW CHEESE

Säntis

Grisom Dairy & Creamery

$19.99

This week we have a delicious new cheese from Missouri's Grisom Dairy & Creamery.

Säntis is modeled after the Appenzeller cheese. It is named after the iconic mountain in Eastern Switzerland where the Appenzeller is traditionally produced. This raw milk cheese is made with spring milk and is aged for a minimum of 60 days. During the aging it is washed in a special herb and local beer solution which helps give it flavor.

This Creamy cheese is only available for an exclusive amount of time each year!

Fragrant, with notes of lemon basil and lemongrass up front, showing hints of celery seed that complement the generous core of pear, peach and lemon-lime flavors. Reveals hints of tropical fruit and fresh-grated ginger on the crisp finish, where the wine gains momentum.

The 2022 Matthews Columbia Valley Sauvignon Blanc is yellow jasmine in color with flecks of green. Intense aromatics of starfruit, lemony sorrel leaf, juicy green pear and mandarin orange open to honeysuckle and linden flower. Followed by flavors of lemon curd, oyster shell, candied orange peel and flint, this medium-bodied, balanced wine has refreshing acidity. It finishes long with briny and stony flavors that are taught and textural.

Beautiful notes of currants, spice, raspberry jam, strawberry, and pureed plum. Hints of vanilla bean, cocoa powder, and macerated berries carry the palate. A darker fruit wine with soft tannins and surprising complexity. A great window into a warm vintage here in Washington State.

BEER STYLE SPOTLIGHT

Maibock

Maibock is the perfect Spring beer: full-bodied but not heavy; malt-forward but not sweet; dry with a hint of zesty hop flair but not very bitter. Maibock is a wonderful transitional beer ushering us out of the dark, heavy beers of winter and toward the lighter, brighter beers of summer. Brewed during the last few cold weeks of winter, Maibocks are left to lager (cold condition) until Spring - with a traditional release during late April, early May. Mai is German for May!

Deep gold to amber in color, Maibock is a fairly strong lager with a typical ABV range of low 6% to 8%. While still full-bodied and malt-forward, Maibock is generally leaner and drier in body with a more pronounced hop note than other Bock styles.

Munich's legendary Hofbrau is credited with the first commercial Maibock dating back to the early 1600's; however, the Maibock of the modern brewing era was likely developed in the early 1800's. Major advancements in malting technology in the 1800's allowed for greater precision over temperature control and thus color development in the drying and kilning of malted barley. It's this technological advancement that made pale-colored malted barley possible and widely accessible, giving rise to lighter-colored beer styles like Pilsner, Pale Ales, and Maibock!

Hofbrau Maibock

$13.99

6pk bottle

Our traditional Maibock is deep amber in color, contains bold roasted malts with a taste of dried fruit, hints of dark caramel and smooth toffee aromas. Overall, a dryish and full body with great depth and a refreshingly earthy hop finish. This over 400 year old recipe won many friends and awards over the years.

Pipeworks Trot It Out Maibock

$13.99

4pk 16oz can

The G.O.A.T. has returned! In a sure sign of spring our maibock is back! Trot It Out (formerly Tip Top Maibock) is an extremely clean lager with a top notch taste! We brew this buddy to be refreshing with gentle malt and hops.
