Ingredients:
1lb Fresh cut green beans, 1 inch pieces
1/4c sweet onion, diced
1/4c feta cheese crumbles
1/4c pecan pieces, toasted
3-4 Tbsp olive oil
1-2 Tbsp rice wine vinegar
salt and pepper to taste
Optional: add cherry tomatoes, roasted broccoli, roasted asparagus or any other veggie you like.
Directions:
Blanch the green beans in boiling water for 2-5 minutes then submerge into ice water to stop the cooking process so you have crispy, fresh green beans.
Mix all ingredients together. Eat right away or refrigerate for 2hrs or overnight.
