Farmhouse Cheese:  All our Jersey milk goes for cheese and it is a golden color from the grass and is A2A2 milk. We have Dairyland Farmers cheese, YoYo, aged Calvander, similar to Asiago, bloomy-rinded Carolina Moon, semi-aged New Moon, semi-firm Hickory Grove, a little Paneer, and a little pungent Danziger. YoYo, our cream top yogurt style, which is $4.00 per pint, is thick, unsweetened, and has live cultures. Use it with your granola or pancakes. Serve Hickory Grove at room temperature with fall crop apples or make a grilled cheese sandwich. Use Farmers with beet, homemade chili or for our chopped salad recipe. We may also bring some Hot and Dill Farmers.
   Pastured Beef: Make a burger with our Ground Beef It's $7.00/ lb. and delicious for Chili, cheeseburgers,tacos, and stuffed cabbage leaves.We also have lean Ground Round, a variety of steaks, Chuck roasts, and stew beef. If you don't see a particular cut, let us know and we can bring it next week if it's available. Our herd is pasture-raised and Animal Welfare Approved. 
  Whey Fed Pork:  Our sausage is currently available only for pick up at the farm 1-2pm Saturday for a few more weeks since we used hams from our friend Sam who owns the Pig restaurant.This pork is from Animal Welfare Approved farms and we have various flavors that our customers love.

Fruchtenicht Honey
Bees make honey from the flowers of perhaps 200 species of plants and honeydew, the secretion of aphids, from several more, mostly conifers. Each plant species will have a slightly different signature of sugars, coloring agents, and the aromatics that give flavor.
The foragers collect up to 70 mg of nectar varying from 30% to 70% sugar depending on the species, soil moisture, humidity, etc. They suck it up from the nectaries with specialized mouthparts and store it temporarily in a honey stomach, an enlarged portion of the esophagus. A comb like structure rakes through it, capturing particulates like pollen, and pass these on through to the intestine. The forager may visit many flowers to make a load and then returns to the hive to deliver it to a special class of workers who process and store it. 
Many changes are made to the raw nectar. Nectar has three dominating sugars: sucrose, glucose, and fructose. The bees add invertase enzymes to split the sucrose into its component glucose and fructose which increases the total number of sugar molecules and thus the osmotic concentration which aids in preservation. The other major change is the reduction of the water content to 15-20%. This is achieved by running microdroplets out on the tongue of the processor bees and then storing it for a short time in thin droplets on cell walls as warm air is fanned through the hive. Full cells are then capped with beeswax. Honey in Arizona may be 15% moisture; in NC we sometimes struggle to reach 18.6%, the legal standard. In my experience honey is usually stable at room or hive temperature for three years before flavor changes are noticeable. Crystallization may occur much more quickly if the honey is high in glucose. The delicious honey from the pharaoh’s tombs is the food of tooth fairies. Mine is recent, local, and tasty.

** FARM NEWS:  

Mario and Jose continue to change over the summer crops to the cool season produce. This week, I am driving to the mountains to get our certified organic strawberry plants... that will need to get planted within the next week.  We all hope to enjoy organic delicious healthy berries in May and June.  Organic SWEET POTATOES are getting ready to be dug and cured ... this is a new crop for us ... and we have three delicious varieties for you. We hope they will be ready in the next several weeks just in time for the holiday season.

With the cooler nights, the okra and cucumbers have just about stopped producing. Mario has the solar powered greenhouses packed with produce ... and they will be coming soon.  Did you know that even our FLOWER bouquets are certified organic?  Orange and yellow MARIGOLDS will be ready this Saturday from the greenhouse... they are so fragrant and beautiful in our flower bouquets. It is not too early to be thinking about ordering your beautiful holiday wreaths... meticulously made by Mario from greenery on the farm. We will have two sizes.. small or large.

Something you may not know about our farm and farming practices....
Folks ask us if our farm is organic. We respond that we follow organic practices but we are not certified. The certification process is quite expensive, time consuming, and arduous.  
Obviously we agree with organic practices or we wouldn't adhere to them. We believe in caring for our soils and pasture grasses as if chemicals and petroleum additives never existed and we raise our
 sheep without the use of growth hormones or feed additives. Our farming practices are both sustainable and regenerative.

We spotted Halloween decorations at a local store in July. So perhaps we’re late to this game. For Halloween, Sunday, Oct. 31, and for the Day of the Dead (Día de Muertos), which is Tuesday, Nov. 2, we have a variety of skull-themed T-shirts. Some of the skulls (calavera in Spanish) are quite colorful.  We even have a few for the little goblin in your life.

Wild Scallions Farm will be at market with some great fall produce including: potatoes, butternut squash, pumpkins, bok choy, turnips, daikon radish, peppers, our last onions and a bit more.  And the fall flush of dahlias are here! We'll have plenty of lovely flower bouquets and bunches of fresh eucalyptus.

Fricks Farm and Apiaries sells local NC honey. Because it is raw honey, it has not been filtered or heated, so it retains pollen particles and natural enzymes. Our honeybees forage around Orange County and Alamance County, NC, so they bring in nectar and pollen from a variety of flora. A mix of red maple, blackberry, tulip poplar, honey locust, and clover honey is typical for the spring/early summer harvest. All of the honey we sell is produced from local sources.
