March Wine Tasting Club: California Cabernet Sauvignon

Tuesday, March 19th | 5:30 - 7:00 PM

Wine Tasting Club meets every third Tuesday of every month. Our staff will organize the tasting by varietal, appellation, or region. Each tasting will consist of 6 to 8 wines and will be tasted blind. The blind tasting format is guaranteed to provide ample opportunity for lively discussion and learning. Cost: $20 per person. Only 12 spots available per month.

Orval Day 2024

Saturday, March 23 | All Day

Orval Day is a day to honor all that is Orval. Every year, Merchant du Vin, importers of the world-famous Orval Trappist Ale, donates 50¢ for every bottle of Orval sold across the country that day. This year's Orval Day benefits the National Forest Foundation.

In typical Noma fashion, this scraggly and ancient Eastside Lodi situated vineyard eked out a scant .5 tons/acre of vibrant fruit in 2020. The low-yields, sandy soils and small canopies on these 100+ year old vines make for a sunshine-filled expression of Zinfandel filled with dark plum, spice and loam balanced by remarkable natural brightness. Fermented with indigenous yeasts and aged in puncheons to retain freshness, this is a wonderfully distinct example of how good Lodi Zinfandel can be.

Just north of Philadelphia in the small town of Ambler, PA, Forest & Main hangs their hat on British-style pub ales, European lagers, and mixed-fermentation saisons. Founded in 2011 in a cozy house-turned-brewery-turned-pub at the corner of its namesake streets, Forest & Main has since outgrown that corner house with multiple locations in Ambler: a taproom within their larger production space, and a pub location in the heart of town, both offering hand-pulled casks and side-pull drafts.

We consider it a real treat to be able to offer these exquisite beers from Forest & Main for the first time in Illinois.

Barrel Aged Saison Collaboration with Bissel Brothers Brewing Co. We had a great day brewing this beer with Noah and Eric from Bissel Brothers in Portland, Maine. We mashed in pale malted barley from Deer Creek Malt, hopped it with Saphir and Tettnang hops, fermented with our Foraged Yeast Culture, aged it in one of our oak foeders with our mixed culture, and conditioned it in bottled for extra flavors and lots of tiny bubbles. We are currently tasting notes of clean ripe donut peaches, wild brettanomyces, tamarind Jarritos, zebra-style Fruit Stripe Gum, apple pie baking, a refreshing acidity, and wet white oak.

We brewed this lovely pubber with British Golden Promise, dark crystal, and a solid portion of dark rye crystal, ooolala. We hopped it entirely with U.K. Challenger and fermented it with our favourite London ale yeast. It pours a deep old copper color with a nice khaki head. It has notes of mixed citrus cottage marmalade, apple pie with minimal spicing, Heath Bars, ethereal Twizlers, and a sassy British bitterness. We’re real stoked on this one!


House Lager

We love this beer so dang much. This one features a lovely base of German Pilsner malt and layers and layers of Saphir and Saaz hops. Fermented slow and cold. We’re tasting notes of barley crackers, lemon verbena, when herbs get that citrus flavor, sparkling pear cider, apple strudel, and drifting clouds to carry you to a happy place.


Solaire Reserve American Wild Ale

Our beloved saison brewed with barley and spelt from Deer Creek Malthouse, hopped with lots of our favorite Hersbrucker, and fermented with our 2020 Foraged Yeast Culture. It was conditioned in the bottle with our mixed culture for maximum tiny fluffy bubbles and extra character. This batch reminds us of others, and presently has notes of lemon bubble gum, yellow or green SweeTarts, wild cherries, tamarind soda, and some dusty dried pineapple wedges.
