Updated Admission Forms...
Every year Katie's Kids is required by DCFS to have families update their admission forms. Your child will be coming home with a paper copy of the admission form or you may click on the link below to access the form.
Please have it turned in no later October 22.

Katie's Kids is requesting that all families be respectful of our staff's personal time. We understand that you may have questions concerning your child after hours. Please remember that our staff have families and other obligations. We ask that you utilize our classrooms email addresses or follow up with staff during Katie's Kids hours.

COVID UPDATES
  • Katie's Kids families will continue to have your family drop off and pick up your child(ren) at the door.
  • Hours of operation will remain 6:45-5:30

Drop Off and Pick Up:
  • DCFS is still requiring that all adults and children over the age of 2 wear a mask inside of our building. We are requesting all adults to wear a mask at drop off and pick up as well; no matter vaccination status. Please remember that the majority of our population are not eligible for the vaccine and safety is our priority.
  • If you are not feeling well or hold any COVID symptoms please arrange for someone else to drop of and pick up your child. This is to protect your family and the staff.
  • If you are in quarantine due to a potential exposure, please make arrangements for someone else to drop off and pick up your child.

Eggless Pumpkin Crumb Muffins

  • Preheat the oven to 350º F (180º C). Line a muffin pan with cupcake liners.
  • In a large bowl, whisk together the flour, baking powder, baking soda, and pumpkin pie spice. Set aside.
  • In a separate medium bowl, whisk together the melted butter, brown sugar, pumpkin puree, vanilla, buttermilk, and vinegar.
  • Add the wet ingredients to the dry ingredients and mix just until combined. Spoon the batter into liners.




Ingredients...
  • 2 cups all-purpose flour (If using all-purpose flour add an extra teaspoon of baking powder and a pinch of salt.)

  • 3 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon pumpkin pie spice
  • 1/2 cup unsalted butter, melted
  • 1 1/4 cups brown sugar
  • 1 cup pure pumpkin puree
  • 1 teaspoon pure vanilla extract
  • ½ cup buttermilk
  • 1/2 teaspoon apple cider vinegar
Crumb Topping (optional)
  • ½ cup (100 g) sugar
  • 1/3 cup (47 g) all-purpose flour
  • 1/4 cup (58 g) butter, softened
  • 1 teaspoon cinnamon
Glaze (optional)
  • 1 cup (120 g) powdered sugar
  • 2 tablespoon (30 ml) milk


Make crumble:
  • Add the sugar, flour, and cinnamon to a medium bowl and stir to combine.
  • Add the butter and use a fork, or pastry cutter, to cut the butter into the flour until the mixture is made of coarse crumbs.
  • Sprinkle the mixture evenly over all of the muffins.
Bake:
  • Bake for about 25 -30 minutes, or until a toothpick inserted in the center comes out clean. Allow the muffins to cool for 20 minutes in the muffin pan, then transfer to a wire rack to continue cooling.
  • When muffins are cool, whisk together the powdered sugar and milk and drizzle over the tops.
