The Laurén Chalmers '83 Beach Pantry is hosting the Career Clothing Donation Drive until March 5 and is accepting donations, Monday through Friday, from 9 a.m. to 6 p.m. at a variety of locations. PANTRY HIGHLIGHT

NATIONAL NUTRITION MONTH WITH NUTRITION 531 CLASS

In partnership with Dr. Virginia Gray, we are excited to host Nutrition 531 workshops during the month of March to highlight National Nutrition Month. National Nutrition Month was created by the Academy of Nutrition and Dietetics to help make informed choices while developing healthy eating and physical habits. Here at the Laurén Chalmers '83 Beach Pantry, we would like to thank Dr. Gray, the Nutrition and Dietetics department and Calfresh Healthy Living for their role in educating and assisting our students with food insecurity at LBSU!

Tomato Pasta and Steamed Vegetable Recipe

RECIPE PROVIDED BY GIOVANNA QUEVEDO

Ingredients:

  • 1 package pasta.
  • 1 can tomato sauce.
  • 1 cup vegetables.
  • Water.
  • Optional Ingredients:
  • Seasonings to taste: salt, pepper, oregano, basil, garlic powder 1-2 cloves garlic (minced), 2 tablespoons olive oil, fresh basil leaves for garnish, grated cheese to taste.


Directions:

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. In a saucepan, heat olive oil over medium heat. Add minced garlic (if using) and cook for 1-2 minutes.
  3. Pour in the canned tomato sauce and let it simmer for 5-7 minutes.
  4. Optional: add fresh or dried seasoning to taste.
  5. Add the cooked pasta in the tomato sauce until well coated.
  6. Rinse vegetables. In a pan, cook vegetables in olive oil (if using) until soft.
  7. Optional: add seasoning to taste.
  8. Assemble plate with pasta and vegetables on the side.
  9. Optional: Add cheese, fresh basil, and any additional preferred ingredients.
  10. Enjoy and save any leftovers for another meal!

The Pantry will have modified hours Friday, March 8 from 2 to 7 p.m.

Please remember to bring your student ID and your own bag when you shop at the Pantry!
