Welcome to the October 2023 edition of our Council newsletter!

As usual, here are a few quick but important items up-front before we get into the news.

  • Our next regular business meeting will be Wednesday, October 11th, starting at 7:30 p.m. All members are welcome. We'll be serving a great Oktoberfest dinner for members at 6:30 for only $5.

  • Just another reminder that our Lounge is now open on Sundays during football season, in addition to our regular hours on Wednesday, Thursday, and Friday evenings. We're now featuring a menu of delicious food offerings at low-low prices including wings, burgers, chicken fingers, fries, mozzarella sticks and hot dogs with all the fixings!

  • At our business meeting on Wednesday, you will have an opportunity to prepay for our Annual Dinner Dance. Our worth Treasurer will have the credit card machine set up and ready to take your payment. More info is in the news item below, but come to the meeting and pay for your spot at our event of the year!
  • Our Draft Beer of the Month is Sam Adams Octoberfest! This rich, roasty Märzen is a pröst to fall. Its deep amber color, mild pleasant sweetness, and light hop character is a hearty (but not heavy) signal to make the most of the crisper days ahead. Like fall, it's here for a limited-time. Drink it in!
Campaign to Benefit Deacon Scott


On September 29th, our Parish put out an appeal to participate in the campaign to support our brother Knight, Deacon Scott Bierbaum, and his family as he now faces advanced metastatic stage 4 cancer treatment.

For over two and a half years, with the financial support of our Parish community, Deacon Scott has managed to care for his wife Rose at home, following her catastrophic brain aneurysm, which left her paralyzed on her left side. The generosity and outpouring of support and love from the Parish was truly wonderful and much appreciated by Rose and Deacon Scott.

Now, Deacon Scott needs our help again, but this time for his own medical emergency.

In May 2023, Scott was diagnosed with advanced metastatic stage 4 cancer and is undergoing chemotherapy. Providing for Rose's needs, running his locksmith business, and undergoing cancer treatment all at once must be overwhelming.

Deacon Scott's friends and our Parish community started a fundraiser to offer material support to Scott, Rose, and his family during this very difficult time. As brother Knights, we are also responding as a Council and as individual members in support of Scott.

Information on making a direct donation, and on our Council's support efforts, will be discussed at our monthly business meeting on Wednesday. Reserve Today for our 52nd Annual Dinner Dance - Saturday, November 4th


Join us we celebrate our anniversary at our 52nd Annual Dinner Dance and Awards Ceremony on Saturday, November 4th! Fine dining, open bar, music, dancing, raffles, and recognition of our members who do so much to make our Council so special.

Back by popular demand, the venue this year is a return to The Ethan Allen Hotel in Danbury, Connecticut, where we'll enjoy a cocktail hour, open bar, full buffet dinner, dancing, photo booth, and entertainment. The cost is $125 per guest, and it is sure to be well worth the price for this event, which will also include our hospitality room for your enjoyment before the event and for the not-to-be missed after-party.

Checks may be dropped off at, or mailed to, the Council (10 Fair Street, Carmel, NY 10512). Please give the names of your guests and enclose $125 for each. You may also pay by credit card at our October membership meeting.

We've once again made arrangements with the hotel for a block of rooms at the Ethan Allen Hotel for our guests at discounted rates. Call (800) 742-1776 (mention "Knights of Columbus room block") and make your room reservations today!

This year we are honoring as our "Knight of the Year" Sir Knight Otto Romanino, and as "Family of the Year," Bill & Gail Silke & Family!

We are again having a large-format (8.5x11") souvenir journal this year with additional color pages in the center. Please click here to take an ad to honor a special person or group, or to promote your business or organization. No ads will be accepted without payment!

Reservations and pre-payment are absolutely required. No walk-ins and no sales at the door. All reservations must be made by October 27th.
 
The night will start at 7:00 p.m. with a cocktail hour with plenty of hors d’oeuvres, followed by a great buffet dinner, our brief awards ceremony, entertainment and dancing, and delicious desserts & coffee. Open bar all night!

Keep the fun going by returning to the hospitality suite at the Ethan Allen Hotel for the fantastic after-party!

Our Oktoberfest Was a Bavarian Blast!

Our Oktoberfest celebration on Saturday, October 7th, was another huge success and a ton of fun! Well over 100 guests were treated to lots of German food, imported German beer on tap, and live German music from the famous Austrian Boys Band.

We served up an incredible menu of home-cooked, authentic German appetizers and entrees featuring hot Bavarian pretzels with beer cheese sauce, goulash soup, potato pancakes, wiener schnitzel, bratwurst, and bunch of yummy traditional side dishes like German potato salad, red cabbage, and green beans amandine. Dessert featured fresh-baked apple strudel and ice cream. Nobody left hungry!

The all-day downpours outside couldn't dampen our spirits inside. Everybody was comfy and cozy in our newly renovated Council Hall, which was dressed to the nines with festive decorations.

Our guests always look forward to our annual Stein Lifting Contest, and this year was no disappointment. Taking First Place in the Ladies' Division was Corinne Stanton, and in the Men's Division our big winner was brother Knight Tim Malone. Congratulations to our winners and thanks to all of the competitors!

This year's Oktoberfest was another smash hit because of the support of our guests and A LOT of hard work from the Oktoberfest Crew and volunteers who pitched-in to help. Our kitchen staff shopped, prepped, cooked, served, and cleaned for the better part of an entire week to make sure the food was the best it could be. Judging from the feedback from our guests, they did a superb job!

Fourth Degree News

The next meeting of Mother Cabrini Assembly will be Thursday, October 19th at our Council.

The meeting will begin at 7:30 p.m. All Fourth Degree Sir Knights are welcome and encouraged to attend the meeting.







  • Comedy Night Kudos! Thanks to PGK Bobby Palazzo and his crew for hosting another fun-filled Comedy Night, where a good time was had by one and all! Thanks to their efforts and the generosity of our guests, we were able to raise funds for a very worthy charity that honors our deceased veterans, Wreaths Across America.

  • In case you didn't see the Flocknote email from our Parish, they reported that Msgr. Joseph Martin, with the advice of his family, relinquished his car and has taken up residence at the Archdiocesan facility for retired priests in the Bronx. There, he will receive a medical evaluation and the care that he needs. Msgr. Martin has made many friends in our Council since coming to our Parish in 2013. At the age of 91, his level of activity and good humor are simply amazing. Join with us in keeping him in your thoughts and prayers. We are hopeful that he will return to Carmel so that the entire Parish can thank him and celebrate his many years of devoted service and friendship.
