It's a bright sunshiny day here in New Jersey. It's amazing what a little sunshine can do for your mindset and your overall sense of wellbeing.

As you can tell I'm feeling pretty doggone good! Does the sun have the same affect on you?

I have a recipe that I want to share with you that will definitely brighten up your morning whether the sun is out or not! Check it out.

Apple Pie Porridge (slow cooker)

YIELDS 2 Servings * PREP TIME 10 mins * COOK TIME 8 hrs * TOTAL TIME 8 hrs 10 mins

Picture this: You wake up to a delightful apple pie aroma that permeates your senses and gently nudges you in the morning as you move to start the day. And all you need to do is walk into the kitchen to have this comforting and nourishing breakfast — it’s waiting for you because you prepped it the night before. Amaranth and teff take the place of oats to add variety and inspiration to your recipe repertoire. Enjoy all that they offer including nutty flavors, plenty of nutrition, and a fun texture to start your day.
 
Ingredients -

1/2 cup organic teff rinsed well
1/2 cup organic amaranth rinsed well
2 cups water
1 cup plant-based milk unsweetened
1 cup organic apple cored and diced
2 tsps ground cinnamon
1/2 tsp ground nutmeg
2 Tbsps maple syrup or date paste*
1 tsp vanilla extract (optional)
 walnuts chopped, or other topping of choice, to taste
 
Directions -
 
- Add all ingredients to your slow cooker. Stir well.
- Set heat on low and time for 8 hours.
- It may be a little clumpy at first after sitting in the slow cooker, but once you stir it well it’ll become nice and creamy!
- Serve with walnuts or other toppings of choice.
