Lemon Dill Dressing

An easy homemade dressing - delicious on spring and summer salads, fresh raw and steamed vegetables, and grilled fish.

Ingredients:

• 1 cup water
• ½ cup extra virgin olive oil
• ¼ cup lemon juice
• 3 Tbsp Dijon mustard
• 2 cloves garlic
• ¼ tsp xanthan gum (optional)
• 1 tsp salt-free seasoning
• 2 tsp dried dill or 2 Tbsp fresh dill
• Salt to taste


Directions:

Add all ingredients into a blender or food processor

Blend on high until thoroughly combined

Store for up to 2 weeks in airtight container in refrigerator

Makes 2 cups
