Photo of the Month
Remember the triplets that were born on our farm? They are now 2 1/2 years old and doing well! Here are Livalot, Luvalot and Lafalot lined up together in the milking parlor. It's neat to see because they can choose to come in at anytime and in any of the eight stalls, but they are right next to each other. It's fun to see the sisterly bonding!

Customer of the Month
The January Customer of the Month has been a fan of Hansen's Dairy since we started our on-farm creamery in 2004.

Jan Hankins and her husband Greg recall discovering our products at the Cedar Falls Farmer's Market. They also took two of their grandchildren on a farm tour.

"It was such a delightful experience for them feeding the baby calves, watching the wallabies, and making butter."

Jan and Greg now buy our products from our Cedar Falls store.

"We love the products for so many reasons ... value, freshness, quality, local, and the process (making the milk tolerable for Greg who is lactose sensitive)," Jan said. "We buy the 1% milk weekly but also enjoy the cheeses, ice cream, and yogurt."

"We will continue to spread the word to family, neighbors, and friends to shop at Hansen's," Jan said. "It's the best milk in town!"

Cow of the Month
Our January Cow of the Month is a beast.

Jutta has produced 105,990 pounds of milk in just over 3 years. She averages 35,330 pounds a year, which is about 6,000 pounds above herd average.

At 5 1/2 years old, Jutta is queen of the farm, always picking out the biggest bed in the barn and getting her way. With those accolades, we let her!

Jutta is also polled, which means she was born without horns (that's a great thing!) and has had four calves in her lifetime. We hope that they follow in her hoofprints!
Cooking with Hansen's
Are you looking for a simple meal or appetizer you can make ahead of time and freeze or enjoy fresh out of the oven? Try these Parmesan Party Meatballs! This recipe can be easily doubled or even quadrupled depending on your needs.

Parmesan Party Meatballs
Prep time: 10 min
Bake time: 30 min
Total time: 40 min
Makes 12-15 meatballs
Ingredients
  • 1 lb Hansen’s Dairy Ground Beef* (thawed)
  • 1 large egg
  • 2 Tbsp Hansen’s Dairy Milk
  • 1 garlic clove*
  • 1-2 Tbsp Hansen’s Dairy Butter*
  • 1 Tbsp dried parsley (could also use other herbs like oregano, basil, marjoram, rosemary, etc)
  • ½ teaspoon salt
  • ¾ c Westby’s Grated Parmesan Cheese*
*Items that can be purchased at Hansen’s Dairy Stores
Directions
  • Preheat oven to 350F.
  • Grease oven-safe baking dish with butter.
  • Whisk egg and milk in a medium-sized mixing bowl.
  • Pour parmesan cheese into a separate mixing bowl.
  • Mince garlic clove.
  • Combine ground beef, garlic, salt, parsley (and/or other herbs) in another mixing bowl until well mixed.
  • Form pingpong-sized meatballs with your hands or a cookie scoop.
  • Dip meatballs into egg mix, coating evenly.
  • Roll meatballs into parmesan, coating evenly.
  • Place meatballs on the buttered baking dish.
  • Bake in the oven at 350F for 30 minutes or until done.
  • Serve fresh, alone as an appetizer or with Valentine Food Co. Marinara Sauce (also found at Hansen’s Dairy Stores) or keep in a crock pot to serve hot.
  • Enjoy!
