Here's an easy recipe from Minute Rice that tastes great:
Ingredients
- 1cup Minute® Brown Rice
- 4 slices thick-cut bacon, cut into 1/2-inch pieces
- 4 scallions, thinly sliced (whites and greens divided)
- 1 cup frozen shelled edamame
- 6 eggs
- 3/ 4 cup sour cream. Divided
- l/2 tsp salt
Instructions
Step 1 - Prepare rice according to package directions.
Step 2 - Preheat oven to 400·F
Step 3 - Sauté bacon in a 10-inch, ovenproof skillet over medium heat until starting to crisp, about 5 minutes. Drain off all but 1 tablespoon bacon fat. Add the scallion whites and edamame to the bacon in the pan and sauté for 1 minute.
Step 4 - Add the cooked rice and sauté for 1 minute.
Step 5 - In a medium bowl, whisk together the eggs, 1-1/2 cup sour cream, and the salt. Add to the skillet. Swirling gently to distribute the egg mixture evenly throughout the other ingredients.
Step 6 - Cook, undisturbed, for 2-3 minutes, or until edges look set. Place the pan in the preheated oven until just set in the center, about 8-10 minutes more.
Step 7 - Stir together the scallion greens with the remaining114 cup of sour cream.
Serve frittata wedges topped with a dollop of scallion cream.
