The tall chamber DynaStar HH-E VER is dual certified as both a dishwasher and a potwasher at all cycle settings. The exclusive triple wash arm system on includes three wash arms that work together to get all ware, including pots and sheet pans, Clean the First Time®. All DynaStar ventless models feature a pumped final rinse system that uses a precise amount of water and water pressure for a pristine rinse, and these models also feature Jackson’s exclusive SmartVent™ technology that automatically adjusts the cycle time based on the temperature of the incoming cold water, thus ensuring optimum ventless performance. These ventless models are high temperature sanitizing dishwashers that use only cold water, saving energy as they do not utilize the facility’s hot water supply.
The DynaStar family has four models, a standard chamber height, a tall chamber height for sheet pans and larger ware, a standard chamber height ventless and tall chamber height ventless. Please contact your Jackson Representative or Jackson for more information.

From the Chair...
It was lovely to see so many of you at the NRA FCSI event in Chicago last weekend. Renewing friendships and meeting new and seasoned consultants was amazing! I hope for many more face to face encounters this year as it really brings us all closer together.
Speaking of getting together, I hope that you had a chance to join one of the three April Town Hall meetings. The meetings were used to gather member feedback on FCSI The Americas which the Board of Trustees will use to begin our Strategic Planning in September. If you did not get a chance to join in, please feel free to drop me a note HERE or join our final Town Hall which we will have for consultants in late July.
We had such great feedback from our members, both Consultant and Allied, that I wanted to share some of the thoughts and concerns we heard. Strategic Planning is so important as it sets our goals out further than just the current board. A future forward look at our next 5 years that assures future FCSI leaders have the same vision and goals.
Marketing – there were many comments on the website and communication in general through that medium. The good news is that we now have control of our own The Americas website (it was previously under FCSI Worldwide) and have contracted with a vendor to design it. It will be up and running toward the end of the Summer. YEA!! There were also comments on more marketing to architects/end users and having a defined market strategy for this.
Chapters – there was mixed feedback around the importance of the chapters and events. The majority thought that there were enough networking events that chapters weren’t necessary to continue. If folks want to stay in touch, they can do it virtually. Good news again, we will have a “community” area on our website that should keep us connected and can ask each other questions.
Education – everyone had great feedback on the Symposium, Conferences, and webinars. We'll keep on planning them with the fun networking and learning opportunities!
Bylaws/Ethics – not a lot of comments back on this, except that the feedback was to keep FCSI consultants independent and focus on protecting our consultant work from others who market themselves as consultants.
As always, thank you for your support and I look forward to seeing you at the first ever Latin America Summit in September …. Cheers!

Friend of FCSI The Americas Passes

With deepest regret we inform you that Lawrence “Larry” Cantamessa, President of PBAC and Associates has passed after a courageous battle with cancer at the age of 63. Larry joined PBAC 27 years ago as a sales trainee and quickly rose through the ranks as a key producer. His leadership capabilities were evident from the beginning and in 2017, he became President and Co-Owner of the company.
Larry was a big supporter of FCSI The Americas attending our conferences and events as well as hosting the amazing PBAC Consultant Appreciation Event every November along with Michael Pasternak welcoming FCSI consultant members.
Larry was very active in many areas of our industry. He was sought out as a member of several Rep Councils by leading manufacturers. He was local chapter President of MAFSI and went on to serve on their National Board of Directors for 10 years. Larry received the MAFSI Pacesetter Award for his dedicated service. He was the current Vice President of the Partridge Scholarship Foundation, an organization of NY food service executives dedicated to providing scholarship assistance to leading Culinary Schools.
Larry was an avid athlete and excelled in cycling, running, skiing, and physical training. Larry will be greatly missed by his loved ones including wife Sarah, daughters Olivia and Hailey, stepchildren Samantha and Nathan along with his father, stepmother, sisters, and many friends.
According to his wishes, his funeral will be held privately. In lieu of flowers, donations in his memory can be made to the following organizations:

FCSI has established standards to ensure consistency, optimum functionality and quality of the BIM content provided for foodservice equipment. The standards document has been created in cooperation with input from representatives of the three FCSI divisions APD, EAME & TAD, having formed the FCSI BIM Taskforce (2020 – 2021) of Professional Consultants. The FCSI BIM Taskforce proposes that this document is used as guidelines to assist content creators globally. The objective of this Standard is provided as a template when content creators are commissioned with producing Revit families of foodservice equipment for the manufacturers of foodservice equipment. This document is not catch all to solve all issues in all regions. We acknowledge that some additional work will need to be tailored to suit local applications and codes. View the full document here.
