Covid-19 altered a number of academic elements for students while the IHN team worked through the restrictions governing private career colleges. We were determined not to give up—and so were the students and faculty! Both accommodated the onerous and necessary changes like champions and fostered solidarity for our collective success. A few syllabus shifts extended to Holistic Food Preparation's Cooking Class; Nutrition & The Environment's Farm Trip and Herbal Medicine's Herb Walk.
Our Holistic Food Preparation's Cooking Class went online and had in-class students join their selected faculty, Ana-Maria Mihai, Candace Bell, Justin Scott, Dana Steeves-Adams or Eva Cabaca. Instructors posted recipe ingredients on IHN's web-based student academic administrative system, SonisWeb, in advance of the course. Students purchased items, prepared their kitchens, and met their classmates in Zoom. In 2018, this introductory but precedent setting course became a full three day experience. We are hopeful, and very much want, to resume this in-person module for our in-class students. We have our fingers crossed that news of virus variants do not disrupt reopenings and put us into a third wave scenario. If they do, we will continue through Zoom, like our exclusive online students, to enjoy seamless contact with faculty and fellow students from around the globe.

Our Nutrition & the Environment course features a Farm Trip. We invite students to get their hands in the lifegiving ecosystem of healthy, organic soil. The value of commitment, patience, staying grounded and aligning ourselves with who we really are and what motivates us can be found in our farm experience. Because of the Covid-19 outdoor gathering limits and physical distancing requirements for most of 2020, the Farm Trip was replaced by an assignment. Any students not able to participate due to the restrictions, are welcome to join the Farm Trip in 2021, as local areas and the world slowly reopens.
IHN has been partnered with a dedicated group of farmers across Ontario and British Columbia—all of them more delighted than the next to share their knowledge. Our exclusive online students will be supported by IHN administration to source credible organic farms, in any part of the world they are in, to gain life, food and environment lessons, informed by a formative day to touch the earth.

Our Herbal Medicine course holds the much anticipated Herb Walk. It is a guided afternoon tour through a local conservation area where students learn to identify local plant life that can be used in healing and rejuvenating formulas. Students also find out that their own backyards and clean, outdoor spaces are alive with nourishing wild edibles (aka weeds!). As with the Farm Trip Covid-19 paused this experiential day. It too, had an assignment that took its place, for the required credit. We welcome any students who missed the lesson due to provincial orders, to connect with us and find out how to join later this year.
Our Herbal Medicine instructors are registered herbalists, fervent about sharing their knowledge. The course, and walk, leave students inspired to create their own herbal medicines with an understanding of how to begin building a home apothecary. When everything is in full bloom, our online students are supported by IHN administration to source herbalists in their area, to discover their incredible local biota.

Information About The Upcoming Break
Our campuses are closed from Monday March 15 to Friday March 19, 2021. Ontario delayed March Break for publicly funded schools in Ontario from March until April. This postponement does not apply to post-secondary private career colleges, such as IHN. The structure of our academic year is created to ensure the completion of program courses taking into account student schedules, graduation timelines, and faculty commitments. This ensures that the academic year is not impacted in any way. While we appreciate the challenges Covid-19 has created, we are committed to providing a seamless learning experience to all of our determined and passionate students.

An Excerpt From IHN's Understanding Lab Diagnostics in Clinical Practice Continuing Education Course!
Dr. David Duizer, ND outlines a holistic approach to metabolism assessment and treatment. From disrupting metabolism and slowing metabolic rate to causing mental/emotional distress and disordered eating habits, popular weight loss programs often cause more harm than good. Sustainable, reliable, and effective weight loss programs need to be individualized, which comes from understanding how to properly analyze metabolism and calorie-burning efficiency. Through clinical laboratory and functional testing, David is able to determine high-value targets for rapid metabolic improvements and efficient weight loss.

Potential Long-Term Health Effects
Could an RNA vaccine alter your DNA? This question prompted one researcher to dig deeper before considering the shot. In a November 27, 2020, Science With Doug article (6 minute read), “Will An RNA Vaccine Permanently Alter My DNA?” Dr. Corrigan explains how the RNA vaccine could potentially have long term effects. When the virus is injected into our body, RNA replicates a portion of it, which is eventually destroyed by our immune system. Corrigan argues, the “RNA introduced into our cells could be reverse transcribed into a segment of double-stranded DNA, then integrated into our core genetic material.”

In the Philippines, where the coconut palm is referred to as the “tree of life”, all parts are used for its medicinal and nutritional properties. CNPs love this tropical fruit for its versatility–the flesh, oil, milk, water, and flour that are produced can be used in countless creative ways. Try coconut milk as a dairy-free alternative for curries, soups, smoothies, and desserts. The flour is a delicious gluten-free substitute that can be incorporated into your favourite recipes. IHN graduate and faculty member, Jamie-Lynn Shaw, incorporates both coconut oil and flour in her Almond Butter Buckeyes.
