We've consulted the Oracle; Autumn is here. We brewed this one with a base of nutty Maris Otter and an auspicious blend of chocolaty, roasty specialty malts. We added just enough coconut cream to give it a gentle creaminess to support the roasty palate. The result is an easy-drinking but complex Fall crusher. Rich cocoa and hazelnut notes are balanced with a hint of toffee and a smooth coconut finish. This one's for crisp days and cool nights around a warm fire.

Fallen Monarch is our newest west coast IPA is brewed with Mosaic and Cashmere. It's a throwback to crisp, clear and piney IPAs brewed with new American Hops. Notes of Bubblegum, grapefruit and floral dankness!

Featuring Mosaic, Cashmere, and Callista hops, this heavier and most oat forward cousin to Bright Wizard has a well rounded fruit forward flavor to it. Our first time using Callista, Flame Wizard gives a citrus and berry forward body that helps set up the thicker smooth finish.

Based on the flavor profile of a Stroopwafel, doughy, undercooked sugar and caramel flavors dominate here. Based off the same recipe as Born of Isolation, this Kviek yeast stout brings plenty of sweet and earthy flavors to the mix. We used a variety of caramel styles including 50 lbs of local Wockenfuss caramel in the boil!

The next in our Cobbler sour series features Boysenberry and Raspberry to give the smooth cobbler taste a tart berry counterpart. Brewed with cinnamon tincture and milk sugar.

         Oliver - Donut Shack
Collaboration with our friends at Donut Shack (Severna Park) and Ceremony Coffee Roasters. This stout was inspired by the chocolate coffee glazed donut from Donut Shack featuring pounds and pounds of cocoa nibs and featuring Ceremony Mass Appeal coffee beans

          Elder Pine - Thrill Seeker
Collaboration with August Burns Red to commemorate the 15 Year Anniversary of their first album, Thrill Seeker. Very aromatic & soft IPA. Notes of pungent passion fruit & sappy white pine.

Dark Saison showcasing the best of farmhouse yeast & roasty grains. Brewed with rye, chocolate rye, tons of dark biscuit malt and fermented with our house saison yeast. Notes of charred rye bread with chocolate mousse, clove, chai, chocolate covered gingerbread, and a nutty malt character under the classic saison spice. Perferct for the autumnal transition.

          Cushwa - Me, Myself, and Citra
This beer is hopped exclusively with Citra hops. The aroma is citrusy and dank. The flavor is dominated by the hops without being bitter. The mouthfeel is balanced and soft on the palate.

Brewed in the Helles style, this beer is bready on the palate and uses traditional German hops that provide a pleasant floral/herbal aroma.

          Cushwa - Marg Mix
Inspired by the classic cocktail, we bring to you our first Gose, Marg Mix. Jam packed with Tahitian Lime, and dosed with sea salt, this beer is bold on aroma and flavor. On the nose lime dominates. The taste follows, with a sharp, welcoming lime punch that will leave you with a slight pucker. The initial zing is then faded out with a gentle touch of salinity. This beer lets you know that it is sour from the beginning and keeps luring you back in for more sips.

This milk stout is extra roasty, and just slightly sweet from the addition of non-fermentable milk sugar and Vermont maple syrup.

Southern Tier Salted Caramel takes a base imperial milk stout (brewed with lactose), Himalayan pink sea salt, and caramelized sugar, to mimic the flavor of the candy.

The perfect mash-up of cacao nibs and peanut butter supported by caramel, chocolate and roasted malts, Absence of Light opens with huge aromas reminiscent of creamy peanut butter cups and transitions into a silky milk stout with rich chocolate and coffee notes tapering to a slightly sweet finish provided by an addition of milk sugar.

We sourced Idaho 7 hops direct from the farm in Oregon to make this our first fresh hop beer. Check out our stories through the day for more information on our process and these beautiful hops. We added Nelson Sauvin and Azacca to compliment the super fresh and resiny character of the Idaho 7. We aren't kidding when we say this beer is the purest expression of hops we've made to date. Grassy, floral, resiny meets citrus, peach, and melon.

Another first for us, we employed a Norwegian yeast strain known for its unique tropical ester character. Fermented at super high temps and hopped with Wai'iti, Azacca, and Cashmere hops this IPA has an intense overripe apricot character and smooth mouthfeel.

 An ode to table beers of old world Europe, Tabell is a 3.8% beer brewed with a hefty amount of spelt and oats plus a touch of coriander and lime leaves. We fermented it using a Norwegian farmhouse yeast and then dry hopped with Hallertau Blanc. The result is a light, fluffy beer that is the perfect companion to your next spicy dish, sushi, or a weekend full of football!

Westbrook - Low and Slow Helles
 Our version of a traditional German-style golden lager. Brewed with the finest German pilsner malt and noble hops. Matured in a horizontal tank for at least 2 months. Clean, crisp, and exceptionally well balanced. Thank you sir, may I have another?

Dipping back into the experimentation with yeast strains and the profiles they create, we bring you Shifting Tides. For V1 we used our tried and true house ale strain and put it up for a nice classic side-by-side with Coastal Haze ale strain in V2. For the dry-hop we went all New Zealand with a blend of Motueka, Wai-iti, and Nelson. This beer has big flavorful tropical notes, with very subtle differences between the two versions of yeast strains.

While he's used to being mistaken as the front man for a famous 70s punk band, SQUID VICIOUS is actually an aficionado of aggressively hopped IPAs. This, his namesake beer, is made with naked oats, oat malt, and flakes oats and is generously hopped with Sabor, Galaxy, Citra, and Hallertau Blanc. Drinking Squid Vicious is like swimming in hops!

Conceived in the mists of San Francisco Bay during the Gold Rush years, this warm-fermented lager is toasty, slightly fruity, and refreshing. Made with traditional Northern Brewer hops, and two row, crystal, and coffee malts, this beer is a perfect balance of drinkability and complexity.

CuvĂ©e des Jacobins Rouge is a Flemish Sour Ale, red in color with a beguiling balance of malty sweetness and acidic sharpness. It is made from spontaneously fermented and barrel-aged beer of at least 18 months in age. The beer is cooled overnight in a large, shallow metal vessel called a coolship and then fermented and aged in large oak foudres which are made in France and assembled on-site at Bockor.
