Think Like A Chef!
You could spend lots of time and energy planting a garden that’s purely for show – or you could focus your efforts on edible gardens, blooming with tomatoes, berries, herbs, and even flowers that will provide you with seasons worth of delicious salads, desserts, and other dishes.
Growing up on a beautiful farmstead as a child, I knew nothing less, for the life I lived provided all one could imagine for a bountiful table yearlong. With that came a lot of escapades, fun, and hard work, and I would not trade it in for one minute. I invite you and your children to experience my personal journey, as you follow along our Storytime with Nada series, the real adventures of me (Dona) and my cousin Bo. Funny, our lifestyle finally caught on, and can be experienced by all of you now, with a “new” concept: Farm to Table!
Essentially farm to table means harnessing the produce and livestock of locally grown farmers and ranchers; to put it simply, buying and eating local. Our milk was still warm “from its source”, and the fruit bursting with juice, as it made its way to our home. Meals on the table were often comprised of items that were brought into the kitchen within hours of us sitting down as a family, making it imperative to get creative, and “Think Like A Chef”.
Growing your own, promotes healthier eating, (most produce loses its nutrients within 24 hours after harvesting), and yields food that not only tastes exceptionally superior, but is packed full of the natural vitamins that promote better health. If you have been following and implementing our newsletters, it is just about the right time to visit your garden, harvest, and start getting creative. When you are finished, write out your recipe on the "recipe card" provided, and take a picture of your tasty dish with your smartphone, or scan it and email to: info@josephpcoryfoundation.org.
Don't forget to include your name in the email. Our staff will choose one winner, who will be notified on February 28, 2021, and will receive a $25 gift card.

Lasagna is Super Healthy,
Especially When it is in the Form of a Garden!

Saturday, January 9, 2021 was planting day for a very excited group of students and volunteers; a great way to “dig in” and start a happy and healthy new year. The Joseph P Cory Foundation, in partnership with Jupiter Creamery, and its foundation, Nourishing Food for Thought, planted their very first Lasagna Garden, sponsored by the Doctors Fotek, of Dental Healing Arts, Jupiter. All parties share a mission, to educate and impact the community for optimal health and wellbeing.
The students, families, and volunteers were up very early, with the goal of transforming a blank canvas of hay and compost, into a thriving lasagna garden. Making their way in the cool fresh air to the planting site, one could get very distracted, as there were chicken coops, fresh eggs, cows and more, at the dairy. An added educational bonus for all attendees, a gardening lecture by seasoned veterans Jono and Kristy Gaza, owners of the sustainable Ness Farm. Learning can be fun, especially with plenty of time for R&R during the morning breaks, to ride on the treehouse swing!
Lasagna gardening is a no-dig, no-till organic gardening method that results in rich, fluffy soil with very little work from the gardener. The name "lasagna gardening" has nothing to do with what you'll be growing in the garden. Instead, it refers to the method of building the garden: adding layers of organic materials that will “cook down” over time, resulting in nutrient-rich soil that will help your plants thrive. Also known as sheet composting, lasagna gardening is beneficial for the environment because you're turning yard waste, kitchen scraps, and anything else you'd add to a normal compost pile into organic fertilizer to grow new plants. Meet Jeannie Rizzo
Jeannine Rizzo holds a bachelor’s degree in Business Management, and a master’s degree in Psychology. She joined The School District of Palm Beach County in 2015, and today proudly serves as a member of the School Food Service team. She is responsible for the development and oversight of Student Wellness initiatives, which includes the District’s “School Gardens” program. To date, this exceptional garden project has expanded from 75, to 144 schools!
Jeannine is responsible for establishing the District’s Garden Collaboration Team, a cross functional lineup of leaders from eleven different departments, ensuring consistent practices district wide. In 2019, this team earned a “Best Practice Award” from the U.S. Department of Agriculture (USDA).
In addition to edible gardens, in 2018, Jeannine created the Garden of Dreams initiative, to help empower district youth. This program was designed for middle schools, with the goal to create youth empowerment cultures on campuses. Each participating site receives a beautiful native butterfly and herb garden, and incorporates a syllabus, created to develop youth empowerment skills. Students are introduced to diverse growth mindsets to expand their self-awareness and self-confidence. In 2021, two additional schools will receive a Garden of Dreams, bringing the total number of these gardens to five.

The actual “Grow it Forward” Scholarship process commences on March 1, 2021. Our foundation is offering a $300 First Prize, $200 Second, and $100 Third to three students who either write a short essay or creates a video (5 minutes of less) describing the following:
2021 Topic: What I learned by participating in the Joseph P Cory Foundation Gardens of Hope education, and how it impacted me/and or my family creating better health and wellness.
The teachers of the winning students will also receive a matching gift card. Detailed instructions to be revealed in the near future.
