Recipe: Low-carb taco salad boats in 15 minutes or less
Servings: 8

INGREDIENTS:
Taco Filling
2 teaspoons salt
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon oregano
½ teaspoon cumin
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon pepper
2 teaspoons olive oil
1 pound ground chicken
1 can black beans, drained and rinsed
1 cup frozen corn
1 scallion
1 avocado
1 tablespoon minced cilantro
Romaine hearts
1 small tomato, diced
Salsa (serve on the side)

Yogurt “Crema”
1 large clove garlic, minced
½ cup yogurt
1 lime, juiced
1 tablespoon olive oil
¾ teaspoons salt
PREPARATION:
  1. Heat olive oil in large pan.
  2. Make the taco seasoning: stir together salt, chili powder, paprika, oregano, cumin, garlic powder, onion powder, and pepper.
  3. Add ground chicken and taco seasoning to the heated pan. Saute for about 5 minutes, stirring regularly, until cooked through.
  4. Meanwhile, prep toppings: Slice scallions thinly. Dice avocado and tomato. Pull leaves off of romaine hearts.
  5. Add black beans and corn to the ground chicken mixture. Cook an additional 1–2 minutes until warm. Remove from heat and set mixture aside.
  6. Make yogurt crema: whisk together all ingredients until smooth.
  7. Fill romaine “boats” with chicken and bean mixture. Sprinkle scallions, avocado, tomato, and cilantro on top. Drizzle with yogurt “crema” and serve with salsa. Enjoy!
Third annual New River CTC Invitational a success
The 2021 New River CTC Invitational was held March 31-April 3 at the Beckley-Raleigh County Convention Center. Even with COVID-19 restrictions and limited capacity in the arena, there were 20 teams that participated and a good turnout from the community.

The event began as the New River CTC Shootout in January 2019 as a one-day event to showcase area high school boys basketball teams, provide financial support for participating high school athletic programs, and raise needed funds for student scholarships. Now in its third year, the event expanded to four days of basketball and grown to 20 area high school teams. The New River CTC Invitational has established itself as one of the premier basketball events in the state that attracts fans, top individual players, and top teams from West Virginia.

Maintenance projects underway
The New River CTC maintenance teams have been working on several projects over the past few weeks. The team has put in a lot of hard work while continuing daily cleaning to protect everyone from the COVID-19 virus.

ATC: Lee Lilly has been working on keeping up with the floors. This is an ongoing project. Justin Wyco reorganized and cleaned the maintenance supply cage.
RCC: Brandon Lemon and Justin Wyco put together classroom shielding protection for faculty to utilize in classrooms across New River CTC facilities. Justin Wyco has also been working on waxing and buffing hallway and classroom floors in the Allied Health Wing and around the campus in Beaver. The floors are looking sharp!
NCC: John Hamon and Justin Foster have been working on shampooing classroom chairs and keeping the grounds at the NCC in shape, including removing leaves and debris across the grounds. The leaf removal is a constant roll for the NCC maintenance team, which keeps them busy year-round. The grounds looks great for spring!

COVID-19 information from the CDC
If you are fully vaccinated against COVID-19
If you are fully vaccinated against COVID-19, you can start doing some things again, like gathering indoors with other fully vaccinated friends and family without wearing masks.
 
Continue to take preventive steps when in public spaces to protect yourself and others:
  • Wear a mask, stay at least 6 feet apart from others, and avoid crowds and poorly ventilated areas.
  • Avoid travel, both at home and abroad.
  • Watch out for COVID-19 symptoms. If you do have symptoms, get tested and stay home.
 


Close contacts
A close contact is anyone who has been within 6 feet (about 2 arm lengths) of someone with COVID-19
for a total of 15 minutes or more over a 24-hour period.
 
You still are considered a close contact even if you were wearing a mask while around someone with COVID-19.
 


Vaccine considerations for people with disabilities
The CDC has information and resources about COVID-19 that are easy to read, for people with limited English, and in American Sign Language. The CDC Foundation funded the Georgia Institute of Technology (GA Tech) to make some COVID-19 resources in other formats, including braille.
 


Possible side effects after getting a COVID-19 vaccine
COVID-19 vaccination will help protect you from getting COVID-19. You may have some side effects, which are normal signs that your body is building protection. Your arm may hurt where you got your shot or you may have redness or swelling. You may be tired or have a headache, muscle pain, chills, fever, or nausea. Side effects can affect your ability to do daily activities, but they should go away in a few days. Some people have no side effects.
