This will be our first vegan potluck at West Hills Unitarian Universalist Fellowship (WHUUF) in two and a half years. We will be eating outside, but with access to the kitchen and restrooms. Come see old friends and meet new ones. For the potluck, please bring a plant-based (no animal products, including honey) main dish, salad, or dessert; a card listing its ingredients; and plates and utensils for your use. If you come alone, figure the amount to serve 4-6; increase the amount 4 servings for each additional person in your party/family. A donation of $2-5 is suggested to help cover the cost of the venue rental.

The Limits of Persuasion

Given that a growing majority of humans are recognizing the reality of climate change, what are the options to work together to respond to this ever-worsening crisis? A small group of Swedish researchers this year have formed a work group and published plans to identify how to most effectively influence individual food choices as one pathway. “The global food system causes immense environmental impacts. Production of food is responsible for more than a third of greenhouse gas emissions, a third of terrestrial acidification and almost 80% of aquatic eutrophication globally. Further, food production requires large amounts of water and land. Agricultural land conversion for food production is one of the largest contributors to biodiversity loss. These production-related impacts are driven by food consumption patterns… food is amongst the most impactful consumption categories in terms of global greenhouse gas emissions.”
The research will identify “what interventions, at any level, can most effectively change public consumption patterns to achieve environmentally sustainable food consumption?”

How Do You Detox on a Plant-based Diet

Many people at some time in their lives feel the need to “let go” of old stuff in their bodies and endeavor to do a detox and/or a plant-based diet or both. Considering this brings up many questions such as….
➡️ What should I eat?
➡️ What supplements would be best to take?
➡️ How long should I do it for?
➡️ Should I fast or water fast?
➡️ Should I eat only raw foods? If so, for how long?
The word “detox” can run the gamut of different interpretations also, as when Mary decided she would do a detox which consisted of avoiding alcohol for a month or when Ashley’s detox was all about cutting out all fried foods, chips and processed foods for 8 weeks.
I feel that the most relevant definition of detox is allowing the liver to most optimally do the job it was born to do: to get rid of chemicals (pesticides, herbicides, etc.), heavy metals, phthalates, BPA, radiation, petrochemicals, and old medication residue over time in the most efficient fashion. ...

Where will you live in retirement? Many boomers are settling in senior living retirement communities, but will these facilities cater to vegans? Jerry Smith and Elaine French will tell us how they started the Plant-Based Nutrition Group at the Willamette View Life Plan Community in Milwaukie, Oregon where residents are offered many healthy plant-based choices at every meal.
For the Vancouver picnic, bring your own meal and chairs. Look for our signs near the corner of E 5th St and E Reserve St at the Fort Vancouver National Historic Site across from Pearson Air Museum. Join us for a meal and camaraderie at 5:30pm with the presentation beginning at 6:30pm.
Jerry and Elaine founded the Vegan Society of Hawaii, helped with the founding of the Vegetarian Society of Utah, started a Vegan group at the Sun City in Mesquite, Nevada, and now run the Plant-Based Nutrition Group at Willamette View Life Plan Community in Milwaukie, Oregon.

Chili Goat Gruff is at risk of closing and needs the community's support! As the only vegan restaurant in Hillsboro, it's important that we come together and show them some love, now more than ever.

Come for the potluck at 5:00 or to hear Chuck Underwood talk at 6:00, or both. We will be eating outside, with shade trees, tables and chairs, and children’s play equipment, and have access to the kitchen and restrooms inside. Masks are optional outside but must be worn in the building. Bring a dish to share, and ingredient list, and your own utensils, cups, plates, and napkins.
Chuck Underwood is the founder of Brand New Vegan, which includes a website, a podcast, a group with more than 23,000 members on Facebook, and loads and loads of recipes. He will be giving an inspiring talk based on his own experience. Potluck starts at 5 pm at the Orenco UU Church, 6815 NW Birch St., Hillsboro.

Pasta Alla Norma

This is eggplant harvest season, so what better time to try an eggplant pasta recipe. This dish originated in Sicily and got the name when its perfection was compared to Vincenzo Bellini’s opera Norma. Most recipes call for a lot of oil to fry the eggplant slices. I developed a no-oil alternative that tastes delicious, using tahini, water, and spices as a coating for roasting the eggplant slices. This version is much healthier than traditional versions but gives you the full flavors.
