“Students are given a toolbox the day they walk into IHN. During their time with IHN, faculty provide tools for students to apply to their future practices. Some tools might seem simple at first, others quite complicated and defined for specificity. Still, others might feel unnecessary one day and then be used as a rule in the future. Throughout the program, each class offers a new and diverse set of tools for a wide bandwidth of jobs. Some are held onto, rarely used, but make all of the difference for one job, while others will be kept at one’s side and used daily for almost everything that a student, in professional practice, will do. I ask students to keep them all, check their significance often. You never know which one might make an impact.”
 
We asked Sidney what she loves about teaching her courses and what she loves about IHN:

“I teach a few different classes at IHN and, to be honest, I love them all equally! No matter which course I am teaching, watching my students light up and experience that “aha” moment is one of my favourite things about working at IHN. Be it that “aha” moment in Nutrition & Health: The Fundamentals, learning about a nutrient for the first time, or that “aha” moment in Comparative Diets learning about the mechanisms behind ketosis, or that “aha” moment in Professional Skills Development when they finally break through any feelings of fear around public speaking.”

A 2017 study concluded that 63 percent of food Canadians throw away is partially due to the imperfect, bruised ugly ducklings of the produce section that many consider unappetizing. In a January 3, 2019, The Cord article (4 minute read) “Buying Imperfect Produce Could Be The Answer To Canada’s Food Waste Problem,” students on a budget found some ways businesses are helping. A sustainable grocer in Waterloo, ON discounts, bruised bananas, and explained on social media that, “it’s important to note that a lot of food goes to waste because of ‘best before’ dates which are not the same as expiry dates.”
