Fresh Fridays
Dear fellow food-lover,

When it’s hot, there’s nothing easier or more satisfying than a great summer salad that requires minimal cooking. The Mediterranean is a perfect inspiration for creating a salad that is both beautiful and nutritious.

Happy cooking from the team at Oldways!
Mediterranean Summer Salads
For our roundup of Summer Mediterranean Salads, we looked to friends in Portugal, France, Spain, Italy, Greece, Turkey, Morocco and California (the most Mediterranean of any place in the United States). You’ll find they are similar, yet each has a region-specific twist.
You can’t go wrong with a Greek Salad. You get briny flavors from the olives, a creamy tanginess from the feta cheese, and a pleasant freshness and crunch from the cucumbers and juicy tomatoes. Add a protein source and serve with a whole grain pita.

Dakos was “invented” years ago by Greek housewives, who used to cut out some of their bread dough and dry it, rather than bake it in an oven. This hard bread—traditionally a barley rusk called Paximadia—is eaten all over Greece, and every region has its own “recipe.” This simple dish features creamy, delicious feta cheese.

This French dish is a warm goat cheese salad with leafy greens, crisp veggies, and slices of crusty bread topped with an olive oil, vinegar and dijon dressing. This impressive appetizer is simple to prepare, but will please your guests.
