Seasonal Recipes & Market Musings with Amy Fritch
Last year, I pickled quarts and quarts of cucumbers, and was sure that I had almost turned *myself* into a pickle! So, I was on the lookout for a different way to use cucumbers. I love the idea of an icy cold granita but was never patient enough to do the process of freezing and scraping. Then I came across method where the cucumber just gets blitzed in the food processor with ice: genius! I added an apple for some sweetness and fresh mint for flavor. If it’s not sweet enough for you, add a bit of honey. Perfect on a hot sweaty day!





Cucumber Apple Granita

1 cucumber, peeled and seeded
1 apple, peeled and cored (I used Gold Rush)
5-6 fresh mint leaves
12 standard-sized ice cubes

In a food processor, pulse the cucumber, apple and mint until chopped. With the motor running, add the ice cubes one at a time and process until combined and icy. Serve immediately.

Cabbage Throw Farm
It's that time again, tomato time! Cabbage Throw Farm will be bringing lots of heirloom tomatoes this weekend, along with other summer flavors, summer squash, basil, cucumbers, dill and green beans. You may even catch some of the first shishitos (but get there before your market manager does, they're her fave)! Everyone loves a classic BLT, but it's even tastier topped with a fresh french onion dip! You can find red & yellow onions and shallots at Cabbage Throw along with garlic to whip up your own combination of onions to saute and combine with chopped scallions, sour cream (or Raspberry Ridge yogurt), lemon juice, olive oil, salt & pepper.
Also available this weekend: lettuce, romaine, spring mix, escarole, fennel, beets, carrots, kohlrabi, purple top turnips, cabbage, herbs, sunflowers and more!
Phillips Farm
SWEET CORN arrives this Saturday at Phillips Farm, along with nectarines, cantaloupe, eggplant, bell peppers, okra and jalapeños! Also available at Phillips - yellow peaches! These early Yellow Clingstones have amazing flavor, and as its name suggests, the peach flesh “clings” to the stone (pit). Clingstones have a nice strong peach flavor and are one of the best varieties for eating, but they take more effort for canning or freezing. Phillips Freestone variety of Yellow Peaches will be ready in a couple of weeks.

Also available this week: plums, blueberries, raspberries, blackberries, currants, green beans, zucchini, cucumbers, squash blossoms, garlic, radishes, tomatoes, beets, leeks, carrots, cauliflower, lettuce, kale, Swiss chard, fresh herbs and much more. 

Scholl Orchards
Apricots arrive this week at Scholl Orchards - these sweet little gems have a short season so don't miss 'em! Yellow and white peaches and plums are plentiful. And how lucky are we that this year's cherry crop just keeps on coming? Sweet cherries for eating, and sour cherries for pies and cobblers - yum! Tomatoes, bell peppers, pickles, string beans and zucchini are also available, along with broccoli, cabbage, cauliflower and cukes! Ohh, and the season's first HOT peppers!

Salvaterra's Gardens
This week Salvaterra's is highlighting English cucumbers! Thin skinned, low seeds, juicy and sweet make these a stand out cucumber! Try this recipe for Creamy Cucumber Salad.

Holy Cow Farm
The summer blooms are in full swing at Holy Cow Farm. The neat thing about a local flower farm is that the flowers come and go as the seasons change, and the latest exciting bloom is the echinops flower. These silvery blue bursts of color are starting to come in and will be featured in this week's bouquets. They add a cosmic texture to an arrangement, are long lasting, and can even be dried for a permanent spot on the table. Be sure to stop by and check out echinops and all the other beautiful blooms (and baby Charles) at Holy Cow Farm this weekend.

Raspberry Ridge Sheep Creamery
Rob is featuring Rose's Ridge cheese this week. Rose's Ridge is a semi-hard cheese made from sheep milk. It is a little sharper than their Markjego and has the same natural rind on the outside. It goes well with a white wine and crackers and is great on a burger.

Try several other cheeses and yogurts including feta, curds and spreadable cheeses.

Come by the tent for your favorite sheep milk products!

Haven Farmstead Table
Haven returns this week with fresh feta - a perfect match for the heirloom tomatoes that are making an appearance this week. Great with peaches and berries too!
