The Cheese Plate
Dear fellow food-lover,

Many European cheeses are like good old friends...reliable, familiar, and always a pleasure to introduce to friends and family. They are one of a kind, make every dinner party they attend better, and you love drinking wine with them! Just like our special time-tested friendships, well-known cheeses must be cherished. To do this, some European cheeses are granted name protection, ensuring authenticity and quality.
Cooking with Cheeses with Denomination of Origin Protection
This month we are enjoying new recipes using iconic cheeses. Their unique flavors cannot be imitated, and they are undoubtedly the show-stopping ingredient in many classics. Imagine a Caprese salad without Mozzarella di Bufala Campania. Or Georgian Khachapuri without the unique taste of Sulguni or Imeretian cheese. They wouldn't be the same dishes, or nearly as delicious. To further prove our point we're sharing three recipes that allow cheeses with protected denomination of origin to shine. Grab those old friends (the people and the cheeses), and let's get cooking!
Tricolore Salad with Parmigiano Reggiano
The shaved Parmigiano Reggiano cheese ribbons atop this colorful salad tie it all together with a rich creaminess and pleasantly nutty taste. We recommend using Parmigiano Reggiano aged over 24 months to optimize flavor and texture.
Butternut Squash with Comté Fritters
Umami-rich Comté cheese is the perfect match for the sweet and nutty butternut squash in this crowd-pleasing brunch dish. These tasty fritters cook quickly, and can be on the table in under 30 minutes. For these Butternut Squash and Comté Fritters, and other recipes check out the Comté website.
Greek Greens and Cheese Pie with Sprouted Whole Wheat Crust
This recipe is inspired by the Greek dish, Spanakopita. Not only are dark, leafy green vegetables some of the most nutrient-dense foods around, but when paired with rich Manouri cheese and a nutty whole wheat crust, their taste can’t be rivaled!
