Okay folks, let's kick this month off with a fantastic cook by "Richard Chrz" . This pork tenderloin was done on the grill, as well as some bok choy, grilled lemons, grilled onions, purple radicchio, and cherry tomatoes. Great presentation, as always.
"Ernest" is back at it with some amazing looking steak tacos with mango salsa and limes. So fresh and so clean.
"grantgallagher" fired up the charcoal for the Puppy Bowl. He and his son enjoyed this big ol' ribeye that was rubbed down with Spiceology Espresso Chili Rub. It looks like Grant nailed this one with a perfect medium-rare, wall to wall. Nice work.
Let's head up to the Poconos for some killer pulled pork nachos by "Dewesq55" . These nachos were topped with cilantro, jalapeño, tomato, black olives, scallions, cheese and sour cream.
"HouseHomey" was putting his Weber kettle to work this month by cooking up some amazing St. Louis-style ribs. Just look at these before and after pictures. What a great cook.
"goosebr160" was busy making a Pitmaster Club favorite, pork belly burnt ends. There is almost too much succulent goodness in these photos!
"treesmacker" was in charge of making some great eats for the Super Bowl this year. Check out these r iblets, pulled pork deviled eggs, and focaccia bread. Those eggs look fantastic.
"Troutman" had his culinary skills in high gear this month. Check out this mango-tomato-cucumber-tomatillo arrangement with a basil vinaigrette dressing. Next, some mock gyros made with smoked leg of lamb, pita bread topped with a homemade tzatziki sauce, cubed up cucumber, tomatoes, and feta cheese. Last but certainly not least, we have these amazing looking pastrami short ribs.
Now for one of my personal favorites; how about these amazing cast iron Dutch oven chili dogs? These dogs were cooked to perfection by "FishTalesNC" . Talk about comfort food.
"Charley Langer" went all out with some braised short ribs with squash and chili. Topped with cilantro and a side of lime.
"texastweeter" threw together a meal that is fit for a king. Check out this plate, lamb chops with a balsamic glaze, seared sea scallops, garlic Parmesan cauliflower puree, grilled asparagus, and a small salad with simple vinaigrette. Great work.
"tbob4" made some grilled tri tip, and just to amp up the flavor he made it into some steak fajitas on his gasser.
"Old Glory" might get the 'keeper of the flame' title for the month. How about this action shot of his monster 3-inch strip steak. This was cooked SVQ (sous vide then seared over the open flame).
Taking a break from his busy life, "rgriffeath" finally got a chance to get out and smoke up some baby back ribs. How about this cook for a return to the smoke? Wow.
"Meat P " fired up his gasser to make some awesome c heese bacon smash burgers using his BGE plancha. Great presentation.
"MarkD" kicked off 2020 with a great brisket cook and some Texas Twinkies.
Let's head out west to Washington for some pork c arnitas with leftover pulled pork made by "Red Man" . What a way to use some left over pulled pork.
Your assignment: sharpen your photography skills and set up some great poses to help your pic get in the running for next month's issue. PitCast Format Change
As we mentioned in last month's issue, we made a big change to the PitCast with Greg Rempe. We are going to make the PitCasts monthly instead of weekly. Then they can be built over the month and be even more fun and interesting. Plus, since we all love Meathead and we love picking his brain, each new monthly PitCast will feature a Q&A with Meathead!

We'll open up a special Q&A topic in The "PitCast" with Greg Rempe channel early in each month, so watch for that! Toward the end of the month Greg will close that topic and interview Meathead and ask him all the questions you've posted, and we'll hear his answers.

February's "Questions For Meathead" topic is still open until Saturday February 22nd , so prepare your questions on anything and get in there and ask while there's still time to hear his answers to YOU! Of course as other fun and interesting topics and interviews come up they will be included in each monthly episode too, but Greg has confirmed it will definitely not be a compilation dad jokes from Jerod Broussard and Huskee.
If you want to sit for a brief interview with Greg for a spot on the next PitCast, we can still make that happen!

Q&A Topics
How nice of you to think of giving us as a gift! Alas, at the moment, our software is not sophisticated enough to handle gift subscriptions and the complexities of who gets charged for renewals, how to handle multiple gifts, etc.

There is a workaround: Subscribe with your email and credit card and create a username and password. Give this info to the recipient and tell them that once they have logged in, they can easily change the password.

You must then decide if you want to pay for their renewal. If so, then you will be automatically charged at renewal time. If not, then ask the recipient to change the credit card number in " My Membership" before the renewal date or you will get the charge.

If this is too complicated, simply sign them up for a Free Trial membership and pass the username and password to them.
