I tend to do some good cooking (& eating) in my spare time and so I thought it would be fun to include a recipe each week in our email newsletter! I hope you will try them and let me know how they turn out for you! Cheers!
Poached Salmon with Cucumber Dill Sauce Recipe
Ingredients
1 - 5” length of English cucumber
1/3 c light sour cream
1 tbs low fat mayo
Salt to taste
1/4 tsp dried dill
1 tsp fresh lemon juice
1-2 cups water
1-2 cups dry white wine
4 salmon filets (about 1lb)
Directions
Cut cucumber in chunks and finely mince in food processor
Add sour cream, mayo, salt, dill and lemon juice...puree until smooth
In a skillet that can hold salmon in a single layer add equal amounts of wine & water that would cover Salmon.
Bring to a boil, add salmon, reduce heat and simmer 5 minutes for 1/2 thick filets or until done
Remove and drain then plate and spoon a ribbon of sauce over the filet
A good New Zealand Sauvignon Blanc, Sancerre, Muscadet would pair well

The fruit is dark and savory, and there is a big mineral component to match, but the bouquet is nicely redolent of dark currant, plum, granite and a raspy dry note that brings crushed shale to mind. The tannins are quite impactful, and they give this wine extra runway for moderate bottle aging.

About Sugar Bear Ice Cream
From Emily! Ice cream has such a beautiful way of bringing out the child in us all, no matter our age. I think that's pretty special. I started making ice cream when my kids were tiny and I was immediately hooked. It all started with one small machine. Then I got a bigger machine and then, an even bigger machine. I began studying ice cream and collecting every recipe I could find, and what started as a hobby turned into an all-consuming passion. I enrolled in the Ice Cream Short Course at Penn State, which has been running for over 125 years and draws people from around the globe. Upon graduation, I started SugarBear, set up shop and never looked back.
I focus on flavors that are built around locally grown or created ingredients. My goal is to celebrate food, small business, and community. Each flavor is made from scratch and reflects the authenticity, joy and creativity of people who live and work in Charlottesville, VA.
