*The Ashmead's Kernel Apples and Calville Blanc d'Hiver Apples are Heirloom varieties. You can read their descriptions below. You may notice a white powder on the surface of these apples. This is organic Kaolin clay, widely used in organic fruit production to prevent sunburn. You can easily clean it off by rubbing the apple or rinsing it under water.
Ashmead's Kernel:
Ashmead's Kernel is a centuries-old heirloom apple cherished by true apple connoisseurs. The brown, rough texture you see on the skin is called "russeting," a natural feature of certain heirloom varieties like this one. Beneath the skin, you’ll find dense, sweet-tart flesh. Unlike modern apples, which sometimes sacrifice flavor for appearance, heirloom varieties retain these original traits. The russeted skin of the Ashmead's Kernel variety also makes the clay more noticeable, as it adheres more readily to rougher textures. Its russeted skin may not be smooth and glossy like modern varieties, but beneath it lies an exceptional flavor. The flesh is crisp, dense, and finishes with a tartness reminiscent of pippins.
Calville Blanc d'Hiver:
A French apple dating back to the 1600s, the Calville Blanc d'Hiver has a distinct shape and soft greenish-yellow hue with a delicate pink blush and russeting at the stem. Its tender flesh offers a tart, slightly spicy finish when freshly picked, mellowing into a pear-like flavor with hints of pineapple after storage. Prized in France for culinary uses like the tarte aux pommes, it holds its shape beautifully when baked.
