Tuesday-Beef Noodle / Cuban Black Bean

~Tender beef and veggies in a comforting beef base combined with homestyle noodles makes for a perfect soup this late November week. A full meal in a bowl, yet a rosemary garlic bread would make dinner complete.

We have not made this unique and flavorful soup in while, and we have been craving it. It has a smokey ham base and is loaded with veggies and protein packed black beans. The ideal lunch with a buttermilk biscuit or dinner with our salad of the week.

Thursday- Butternut Squash and Wild Rice / Lemon Chickpea Orzo

~This soup was just so popular and so yummy we decided to make it sooner than later. We just cannot get enough of this butternut squash that Ambrose Farms grew this year, yet we hate to see it go at the same time. This soup has a creamy coconut milk base which just adds to the amazing flavor and texture of this dish.

This soup is light yet hearty and completely satisfying with the chickpeas and orzo. The base is all vegetarian and popping with lemon and herbaceous flavors. A piece of our crusty focaccia would pair perfect.




Friday- Chicken Fajitas

~ Perfectly seasoned and tender chicken combined with peppers and onions make for the easiest dinner that everyone will love. There will plenty for two and it comes with tortillas to make it a complete meal. Dinner is done.




Saturday-

~ One of my favorites. Sweet strawberries, blueberries, candied almonds, tangy red onion, and savory blue cheese crumbles all on a bed of mixed greens.
