New Article: Nickerson Gardens Coordinating Council



SC CTSI held its kick-off meeting for the Nickerson Gardens Coordinating Council on January 23rd, marking the commencement of a dedicated initiative to tackle healthcare challenges in the community and initiate the provision of essential services.


The last meeting before this one occurred in November 2023, where we focused on identifying both existing and potential new services to meet the community’s health needs. Going forward, the council is set to convene monthly, and we encourage all participants to commit to at least a year of involvement to ensure the initiative's continuity and effectiveness.

Pacific Oaks College 3rd Annual Black Health and Wellness Fair 2024

The Healthy Food Corner

Easy & Healthy Breakfast Hash Recipe


Ingredients

  • 1 tablespoon
  • Olive Oil
  • 125 grams
  • Raw Butternut Squash (chunks)
  • 6 ounces
  • Medium Zucchini (chunks)
  • 149 grams
  • Bell Pepper (diced, red)
  • 1 Smoked Chicken Sausage (chopped)
  • TIP (Avoid spicy flavors that may cause heartburn)
  • 2 Whole Eggs
  • 1 Small Avocado (~ 146g)
  • Sea Salt & Pepper
  • Garnish
  • Cilantro
  • Green Onion

Instructions


  • Set a skillet on medium heat and add oil and butternut squash. Cook the squash for about 8 minutes or until the outside of the squash is brown and the chunks can easily be pierced with a fork.


  • Add zucchini and cook for an additional 2 to 3 minutes. Then toss in bell pepper and chopped chicken sausage. Cook everything together for about 5 minutes.


  • Make two holes in the skillet and crack 2 eggs into the holes. Cook until the clear part of the egg turns white, about 2 to 3 minutes.


  • Either plate the food or eat it directly out of the skillet. Enjoy the meal with fresh avocado to boost the fat content and make the meal creamy so it’s easier to eat.


  • Season to taste with sea salt & pepper and garnish with cilantro and green onion.
