Thank you to all who joined us for today's Lunch and Learn on balancing macronutrients. Below you will find a recording of the presentation along with some additional resources.

Session Materials:
For the Chicken Tortilla Soup:
  • 16 oz. rotisserie chicken (used 2.5 cups)
  • Changed to half of a can of light coconut milk (could certainly still use whole can depending on preference)
  • Add 1 heaping teaspoon of cumin and chili powder
  • Use 1-2 tablespoons of Greek yogurt per serving as garnish
For the Tuna Salad:
  • 85 grams tuna = 1/3 cup
  • 25 grams celery = 1/4 cup (can reduce to 1/8 cup if desired)
  • 20 grams cabbage = 1/4 cup
  • 5 grams green onions = about 2 tablespoons chopped
  • 1 gram Everything but Bagel seasoning = 1/4 teaspoon (can omit completely if unavailable)
  • 30 grams nonfat Greek yogurt = 2 tablespoons
  • 15 grams sriracha = 1 tablespoon (or less depending on preference)
