Few regions give the Chardonnay varietal a platform to shine as purely as it does here... this small stretch of land between Paris and Beaune that is known as Chablis will be the setting alongside our esteemed guest, winemaker François Servin for this week's Tasting Flight!

The first three factors give the Chardonnay a vivaciousness and purity; the latter lends the region an incredibly high level of consistency, and stature. Servin's Chablis lead the pack as approachable, elegant, and a pure representation of this northern isle of Burgundy.
The $35 Servin Chablis Tasting Flight starts tonight (Wednesday), and continues through the weekend. If your schedule allows and you would like a more thorough experience with François' Chablis, then I reccommend grabbing a seat at our Saturday night Dinner while seats are still available (online reservations here). MARCEL SERVIN
Chablis AOC 2022

The majority of the house-labeled Servin Chablis is planted in the vineyard “Les Pargues” situated behind the Premier Crus Vaillons and Montmains. One of our favorite Chablis due to its wonderful balance, crisp acidity, and streak of minerality.
Varietal: 100% Chardonnay. Kimmeridgian limestone soils give the now 40+ year old vines an incredible amount of minerality, tension, and focus. Vinified in stainless steel.
Tasting Notes: Wonderful balance. Bright floral, green apple and tropical fruit notes are complemented with balanced acidity & minerality. Saline undertones, and some ripe fruit on the palate lead to a dry finish.

MARCEL SERVIN
Chablis 1er Cru 'Montée de Tonnerre' 2022

A soft & elegant wine, the Montée de Tonnerre is situated right next to the Grand Cru Blanchot vineyard. The notable white clay helps to develop intense fruit & floral aromas while the older vines add the depth & complexity. Regarded as the best 1er Cru.
Varietal: 100 % Chardonnay (known locally as “Beaunois”) from 35 year old vines that are grown on moderate slopes, exposed to the west, and welcoming the sun in the afternoon. The grapes ripen easily, especially since they are protected from the East winds. The shallow soil is underlain with Kimmeridgian marly limestone, and reveals veins of blue clay, which gives the wines both minerality and energy.
Tasting Notes: Pale yellow color with grey highlights. The nose is very fine with notes of acacia flowers and white fruits. A very elegant and feminine wine. On the palate, there is a nice acid balance, and a lovely texture. The refined, intense and wonderfully sleek medium weight flavors flash a bracing salinity on the classy, balanced and wonderfully persistent finale.

MARCEL SERVIN
Chablis Grand Cru 'Les Clos' 2021

Often quoted as being the King of the Chablis Grands Crus. The Les Clos vineyard produces the best qualities of all the other Grand Crus vineyards - Complex and powerful with a perfect balance, Servin vinifies this wine in the traditional Burgundian style.
Varietal: 100% Chardonnay from Francois’ personal parcel located in the heart of this famous Les Clos Grand Cru vineyard, just above the prominent nut tree. This great location helps Francois make one of the very best Les Clos Chablis.
Tasting Notes: Med straw-gold, slight flecks of green color. Pronounced orange, lemon and lime citrus fruits and peels, citrus florals, green apple, bosc pear, and a very strong mineral core. A clear example of the dominant superior character of Les Clos. Pronounced nose and palate, structural acidity. Long and complex finish. A Grand Cru that will reward you with long term cellaring.

François Servin grew up at Domaine Servin tasting vintages like 1929, 1947 and 1959. This shaped his view on what a wine from Chablis should be like.
"I learnt to taste with my grandfather, because I lost my father when I was 14, explains François Servin. For me it is important to keep the original style of Chablis. It is a wine with a full palate and long finish. For me a good Chablis is not a wine which is very elegant when young. Chablis for me is a wine which is good over 20 years."
There have been Servins in Chablis for centuries at least. The family can be traced back to 1640. In addition Jean-Paul Droin, of Domaine Droin, has found documents from 1547 listing the owners of the Chablis vineyards and Servin was one of them.
Domaine Servin’s 36 ha 39 of vineyards are situated within the boundaries of the village of Chablis, lying solely on Kimmeridgian limestone soils, which gives the wines their incomparable minerality. The majority of the vineyards are over 40 years old. The different rootstocks of these non-cloned Chardonnay plants produce a unique style of Chablis, combining concentrated flavors and intense aromas, our guarantee of excellence.
Francois took his personal vines from the family Domaine, Domaine Servin, to create Domaine Marcel Servin. The name, Marcel Servin is in respect for his father, grandfather and great grandfather who were all named Marcel.
Today, the Servin "method" is a careful mix of traditional and modern techniques. Following tradition, the finest vineyards are hand-harvested and each parcel is vinified individually, in order to respect the identity and authenticity of the terroir. Modern technology is used to produce consistently high-quality wines while retaining the inimitable “Servin” style. Each wine must find its own identity through specially adapted, tailor-made winemaking.

Chablis wines are dry white wines which are characterized by their purity, crispness, sophistication and minerality. The Chardonnay varietal gives results in Chablis unlike anywhere else. It draws its personality and character from a subsoil that is 150 million years old, and ripens in ideal conditions, in a semi-continental climate, which allow it to attain a good balance between sugar levels and acidity.
Today, the area planted in Chablis is about 5,800ha. In 1955, after the phylloxera crisis in the 19th century which ravaged France's vineyards, then two world wars, Chablis covered no more than 550ha of vine. Nonetheless, not all the appellation's territory is planted as yet: the delimited zone comprises 6,800ha spreading along the valley of the Serein, the river which runs through the wine region from south to north before flowing into the Yonne.
The volumes produced have changed in accordance with the increase in area cultivated, with minor variations due to climatic vagaries. Between 2017 and 2021, the harvest amounted to slightly over 279 202hl, the equivalent of 37,2 million bottles (average 5 years : 2017-2021).
