Congratulations, Jackie Bengry!
Jackie has spent over 20 years with Liberty as the Director of the Treehouse Activity Center – to adults it is the child care, and to Liberty’s youth it is best known as ‘Jackie’s House’. Jackie’s tenure she has come full circle as the children she once cared for are now grown and bringing their own children to the center. She has hired many of the young adults who were once building Lego castles, coloring pictures, and playing dress-up in the ‘Treehouse’. We are grateful for Jackie’s involvement and the positive impact she has created for children and their families over decades. Jackie will no longer serve as director of the child care, and will thankfully continue to work within the center. Jackie will be transitioning her responsibilities to Sara Scheil, Liberty’s new Youth Services Director.
Welcome, Sara Scheil!
Sara has been an elementary school teacher and reading interventionist since 2005, most recently having taught Kindergarten in the Ann Arbor Public schools. Last year, Sara spent the summer with Liberty as the Assistant Camp Director. She is known for her creativity, organizational skills, and ability to collaborate seamlessly with a team. Sara will oversee the Treehouse, youth programs and classes, and birthday parties. Sara is eager to get started in this new role building connections with your family and creating many joyful memories for your children.
Mango Mousse
From the desk of Bethany Williston, M.S., Registered Dietitian Nutritionist at Liberty Athletic Club
This mango mousse recipe takes 15 minutes to prepare and an hour to chill. If you prefer something a little more decadent, try the Nutella mousse recipe that is also quick to make and just as delicious!
Mango Mousse (makes 4 servings)

Ingredients
  • 2 1/2 cups chopped fresh mangoes (3 - 4 small, yellow Ataulfo or 2 large, red and green Tommy Atkin mangoes) or a can of mangoes
  • 0 to 2 Tbsp honey or sugar (less if the mangoes are really sweet, more if they're tart)
  • 1/2 cup whipping cream or heavy cream, you can use coconut cream for a vegan dessert
  • Optional garnish - diced fresh mango, kiwi or strawberries, mint sprig, whipped cream, lime wedge

Directions
  1. Using a blender or food processor, puree the mango
  2. Add the sugar and blend briefly
  3. In a separate bowl, preferably metal, use a hand-held mixer to beat the cream until soft peaks form. Don't over mix.
  4. Using a spatula or wooden spoon, fold the mango puree into the whipped cream
  5. Pour mousse into 4 glasses, cover with plastic wrap, and chill for at least an hour
Nutella Mousse (makes 4 servings)

Ingredients
  • 1 1/2 cup heavy cream or whipping cream
  • 1/2 cup Nutella
  • Optional garnish - chocolate shavings, Ferrero Rocher chocolates, chopped hazelnuts

Directions
  1. Using a hand-held mixer, beat the cream until soft peaks form. Don't over mix.
  2. Using a spatula or wooden spoon, gently fold the Nutella into the whipped cream
  3. Divide the mousse into 4 glasses
