Marinating the halibut helps bring out the flavor in this low-fat fish dish. And steaming eliminates the fishy odor that often lingers when baking or broiling.
Ingredients:
2 tsp minced garlic
1 tsp ground ginger, or 1 oz fresh ginger
2 medium uncooked scallions, minced
1 tbsp soy sauce
1 tbsp sherry (dry or sweet), or nonalcoholic cooking wine
1½ lbs uncooked halibut fillets
Instructions
Combine garlic, ginger, scallions, soy sauce, and sherry in a small bowl. Pour mixture over halibut and marinate in the refrigerator for up to 2 hours.
Fill a saucepan with water so that it covers about one inch of the entire pan, and bring water to a boil. Place halibut in a steamer basket and discard marinade. Set steamer basket in a saucepan, making sure basket sits above the water.
Cover saucepan and steam until halibut is completely cooked or until it flakes easily when tested with a fork, about 10 minutes.
