Mint Recipes
From the desk of Bethany Williston, M.S., Registered Dietitian Nutritionist at Liberty Athletic Club
Mint plants are available in grocery stores right now. Mint always sounds cool and appealing but how do you use fresh mint? Here are three minty recipes.
Fresh Fruit and Veggie Salad with Mint Dressing (makes 4 servings)

Ingredients
  • 4 cups of lettuce
  • 2 small bell peppers or 1 large
  • 2 oranges, peeled, cut into bite-sized pieces
  • 2 apples, cored, cut into bite-sized pieces

Dressing
  • 1/4 cup mint leaves
  • 2 Tbsp olive oil
  • 1 Tbsp honey
  • 1 Tbsp fresh lemon juice
  • 1/2 tsp salt

Directions
  1. Combine all of the dressing ingredients in a mortar pestle and crush them coarsely
  2. Combine all salad ingredients in a bowl and toss
  3. Add dressing
Yogurt Mint Sauce
(makes a little more than 1 cup of sauce)

This sauce is great on grilled chicken, Beyond burgers, falafel, or use it as a dip for raw veggies or pita chips.

Ingredients
  • 1 cup plain Greek yogurt
  • 1/2 cup fresh mint leaves, chopped
  • 1 clove garlic, minced
  • 1 Tbsp fresh lemon juice
  • Salt and pepper to taste

Directions
  1. Whisk everything together
  2. Refrigerate for an hour before eating
Mint Julep, non-alcoholic
(makes 1 serving)

Ingredients
  • 4 to 5 mint leaves
  • 2 sugar cubes or 1/2 ounce simple syrup
  • 1/2 cup lemonade
  • Crushed ice, the smaller the pieces of ice, the better it integrates
  • Fresh mint for garnish

Directions
  1. Place mint leaves and sugar or simple syrup into a glass
  2. Gently muddle them together with a wooden spoon (you want to release the essential oils, not obliterate the leaves)
  3. Add lemonade
  4. Fill glass with crushed ice and stir for at least 30 seconds and until glass becomes frosty
  5. Garnish with mint sprig

* To make a Mint Julep, with alcohol, replace some or all of the lemonade with bourbon

Tennis News
from the desk of Dan Goldberg, Director of Tennis
The Liberty tennis experience is a uniquely personal one. Some players enjoy the social aspect of the game, while others prefer the intensity of a competitive clinic or USTA League match.
For a select group of high-level junior, high school and college players, Liberty is well regarded as a top training hub where they can regularly go to hone their skills.  The Liberty tennis staff has developed many players that have won High School State Championships, and have earned top Midwest and National rankings. Every year several players go on to compete on college tennis teams and some earn athletic scholarships. As the NCAA and Girl's High School Tennis seasons have recently wrapped up, I would like to recognize several current and former Liberty players and teams that have recently excelled on the courts.
