This impressive-looking breakfast is satisfying enough to make for guests at a fun Sunday brunch; feel free to scale up the ingredients if you're having a bunch of people over. This recipe gives your favorite breakfast sandwich a fun makeover by serving it on sweet potato toast. It also features Mexican-style cheese, turkey bacon, sunny-side-up eggs, and chopped scallions for a bit of color and crunch. It's got everything you could ever want in a hearty breakfast. Just keep in mind while you're making it, don't spray your cooking spray directly into the toaster. Lightly coat the potatoes away from the heat source.

Ingredients:

  • 4 oz uncooked sweet potatoes, cut into two 1/3-in-thick slices
  • 3 tbsp WW Reduced fat shredded Mexican style blend cheese
  • 2 sprays cooking spray
  • 1 pinch table salt, optional
  • 2 slices cooked turkey bacon, crumbled
  • 2 large eggs
  • 2 medium uncooked scallions, chopped


Instructions:

  1. Spray sweet potato slices lightly with cooking spray; season with salt. Toast on the highest setting in the toaster or toaster oven 2-3 times, until potatoes are lightly browned and fork tender (flip slices each time for even toasting).
  2. While potatoes are toasting, coat a nonstick skillet with cooking spray; cook eggs sunny-side up.
  3. To serve, top each sweet potato slice with 1 1/2 tbsp cheddar, 1 slice of crumbled bacon, 1 egg, and 1 tbsp scallion; serve immediately.
  4. Serving Size: 1 topped toast slice!
