PANTRY HIGHLIGHT

THANK YOU TO PANTRY VOLUNTEERS

The Church of Latter Day Saints-East Stake held another successful food distribution. They donated a substantial amount of food, including meat products, to the Laurén Chalmers '83 Beach Pantry. Their continued support demonstrates a profound commitment in assisting our community. The Laurén Chalmers '83 Beach Pantry staff aided in the distribution of the donations. Our collaboration makes a significant difference in addressing food insecurity and helping people in need. We hope to inspire communities coming together to take care of one another.

Leek and Bacon Recipe

RECIPE PROVIDED BY ANNE deKLEER, PANTRY STAFF MEMBER

Inspire your meal planning with recipes crafted from Beach Pantry essentials. Enjoy exploring new dishes while you bring the pantry to your plate!

Ingredients 

  • 3 to 4 leeks
  • 4 bacon slices
  • 2 cups vegetable broth
  • 1 tbsp of thyme
  • 3 tbsp of white wine (optional, can replace with vinegar)


Directions:

  1. Heat the oven to 390℉.
  2. Cut the white parts of the leek into 1 inch pieces.
  3. Cut the green parts of the leek into smaller pieces; about ½ inch thick.
  4. Fry the white parts in a pan with a little bit of olive oil.
  5. While frying, sprinkle ½ tbsp of thyme over the leeks.
  6. Take the white parts out and add the green parts in the same pan. Continue cooking for about 5 mins and add the rest of the thyme.
  7. In a glass baking dish, spread the green parts over the bottom, then place the white chunks on top, standing up.
  8. Pour the vegetable broth in the dish until the white parts are halfway covered.
  9. Add white wine if desired, or vinegar.
  10. Chop the bacon slices into small slices, about ¼ inch thick, and sprinkle the bacon over the baking dish.
  11. Cover the glass oven dish with aluminum foil and put in the oven for 40 minutes.
  12. Remove the foil and put it in the oven for an additional 5 minutes.
  13. Remove it from the oven, let it cool down and then serve!
