Chablis wines are dry white wines which are characterized by their purity, crispness, sophistication and minerality. The Chardonnay varietal gives results in Chablis unlike anywhere else. It draws its personality and character from a subsoil that is 150 million years old, and ripens in ideal conditions, in a semi-continental climate, which allow it to attain a good balance between sugar levels and acidity.


The wines of Chablis are sub-divided into four appellations (detailed below), and are identified by precisely delimited production zones which are subject to strict production regulations. Logically, the higher up the hierarchy, the tighter these regulations.

Petit Chablis (18% of production)

The terroirs of the Petit Chablis appellation are located on the higher slopes or the beginnings of the plateau. They are made up of hard, brown limestone, or sometimes silty, sandy soils, in general at an elevation of between 230 and 280 meters, with varied orientation.


Chablis AOC (66% of production)

No other French wine region has affirmed such faith in geology. The main bedrock comes from the Jurassic epoch, or more precisely the Kimmeridgean age (150 million years ago). Deposits of tiny oysters can be found in the rock, which were left by the warm, shallow sea that once covered this territory. These creatures were in the shape of a comma, which gives rise to their name: Exogyra virgula.


Chablis Premier Cru (14% of production)

As for Chablis, the main bedrock dates from the Jurassic, or more precisely the Kimmeridgean era. One particularity concerning Chablis Premier Cru is that the Climats are spread between the right and left banks of the River Serein, a tributary of the Yonne which flows through the region from south to north.


Chablis Grand Cru (2% of production)

The terroirs, formed in the Upper Jurassic era, 150 million years ago, are composed of limestone and marl with Exogyra virgula, tiny oyster fossils. Chablis Grand Cru is one of the rare French AOC wines to make reference to its geology, notably the Kimmeridgean age.


Today, the area planted in Chablis is about 5,800ha. In 1955, after the phylloxera crisis in the 19th century which ravaged France's vineyards, then two world wars, Chablis covered no more than 550ha of vines. Nonetheless, not all the appellation's territory is planted as yet: the delimited zone comprises 6,800ha spreading along the valley of the Serein, the river which runs through the wine region from south to north before flowing into the Yonne.

A close-up of Kimmeridgian soil – A gray-colored limestone-based soil originally identified in Kimmeridge, England. Kimmeridgian clay is calcareous clay containing Kimmeridgian limestone. This is the principal soil type of the Loire Valley, Champagne and Chablis regions.

DOMAINE JOLLY ET FILS

Petit Chablis 2022

With four generations of experience, Domaine Jolly is known for producing traditional, mineral-driven Chablis wines. The Domaine is located in Maligny, just a few miles north of Burgundy’s famous Chablis village. The winery is managed by Denis Jolly, whose main focus is creating wines that are a true expression of the Kimmeridgean & Portlandian terroirs.

 

Varietal: 100% Chardonnay grown on hard, brown Portlandian limestone soils, which at times can be muddy and sandy. The vineyards are situated high on a plateau, so the vines have a varied exposure, mostly south and east. Malolactic fermentation follows for 30 days and the wine is aged on its lees for 7 to 8 months.


Tasting Notes: A pale yellow wine with notes of white fruits, lemon and grapefruit. On the palate, this is a pure and lively wine which has good acidity and notes of ripe apple. Excellent with poultry, grilled seafood, vegetarian dishes and a variety of cheeses.

DOMAINE PAUL NICOLLE

Chablis Vieilles Vignes 2022

Domaine Paul Nicolle is rooted in Fleys, a winemaking village in the middle of the vines located ~4 km from the town of Chablis. The 2020 Vieilles Vignes is a classic expression of cool climate Chardonnay & reveals why Chablis is famous around the globe.


Varietal: 100% Chardonnay from around Fleys in AOC Chablis.. Élevage is done on the lees in stainless steel tanks, which produces a house style that is both fresh and vibrant, but also rich on the mid-palate.


Tasting Notes:  Bursting with citrus, white flowers, yellow stone fruits, green apple, and an undeniable freshness. Pretty nose of sweet blossoms and beeswax enveloping apricot and green apple notes. Sleek on the attack with medium weight on the palate but good persistence on a mouthwatering finish.

DOMAINE MARCEL SERVIN

Chablis 2022

The majority of the house-labeled Chablis is planted in the vineyard “Les Pargues” situated behind the Premier Crus Vaillons and Montmains. One of our favorites - basically Premier Cru quality at a village-level price.

 

Varietal: 100% Chardonnay. Kimmeridgian limestone soils give the now 40+ year old vines an incredible amount of minerality, tension, and focus. Vinified in stainless steel.


Tasting Notes: Bright floral, green apple and tropical fruit notes are complemented with balanced acidity & minerality. Saline undertones, and some ripe fruit on the palate lead to a dry finish. Wonderfully balanced with nice minerality.

DOMAINE DANIEL SÉGUINOT

Chablis 1er Cru "Fourchaume" 2022

Chablis, FR

This well-regarded estate lies on the right bank of the river Serein, where the rich Kimmeridgian soils give the wines the minerality so typical of great Chablis.

 

Varietal: 100% Chardonnay from fruit grown strictly within the Fourchaume 1er Cru. It's unoaked in the Seguinot-Bordet style, and unusual horizontal fermentation tanks give the wines more lees contact during maturation, which add a layer of extra complexity to his beautiful, pure, wines.


Tasting Notes: Very pretty pale golden yellow in color with light greenish glints. Bright, luminous and limpid. The nose is an explosion of fine fresh notes of elegant white flowers, fresh brioche and leafy tenderness. The taste reveals instantly all its power, richness and elegance-perfect balance of finess, mineral, mellowness and vivacity.
