Winter Market #14 | April 6, 2024
Holy moly, our main market season is only a month a way! West Ward Market opens Wednesday May 1st and EFM springs to life on the riverfront starting May 4th. We've got a lot to do between now and then, but fortunately the Winter Market keeps us fully fueled with so many healthy veggies, mushrooms, greens and apples. C'mon down and fill your market bag, and don't forget to get your Winter Warrior card stamped.

Ready for the eclipse? Our friend Todd from Lehigh Valley SpaceFest will be at the market selling some legit shades to raise funds for the upcoming event!

Braised White Beans and Greens With Parmesan

This classic recipe is just so satisfying (not to mention easy) - with creamy white beans, garlic, parm, and exquisite escarole (get it at Cabbage Throw Farm). Any true Italian knows it well - it's comfort food at its best.
You can also substitute Swiss Chard or kale (just don't tell your Italian friends. But do serve it with a crusty baguette. It makes a lovely side dish with your favorite sausage from Breakaway Farms. Or is magnificent on its own.

With an upcoming solar eclipse, Cabbage Throw Farm is setting the intention for drier and warmer weather in the future. Excess rain has delayed plantings but winter vegetables will still be available. This week: lettuce, escarole, microgreens, rutabaga, turnips, specialty radish, onions and sweet potatoes.

The Easter Bunny seemed to prefer apples over carrots at last week's market. But don't worry, there are still plenty of Evercrisp, Ludacrisp, Honeycrisp, Goldrush, Pink Lady, Fuji, and Crimson Crisp left for you!

Pro Tip: Make some applesauce this weekend, before apple season ends. It's so easy to make, and you can it or freeze it!

Funny story... In the McBride family, my Mom was notorious for making and freezing applesauce (by the boatload)! As kids, whenever we'd ask for dessert, Mom always said, "How about a nice bowl of applesauce?" This always elicited moans and groans from us since we were of course dreaming of cookies and cake. As an adult, I do appreciate Mom's effort to provide healthy snacks. And I do love a "nice bowl of applesauce" now and then (but not for dessert!).

Celebrating the Solar Eclipse
Total Solar Eclipse - Are you Ready?
A Free Science Program
Saturday 1:00 - 2:00 pm at Nurture Nature Center
On April 8, 2024, a total solar eclipse will cross North America, crossing over the United States and the sun will be blocked completely in some locations. In Easton we will have almost (but not a total) solar eclipse with a 0.985 magnitude peaking at around 3:18 pm. A total solar eclipse happens when the Moon passes between the Sun and Earth and the sky will darken as if it were dawn or dusk. Join us at NNC to learn about it and how to safely view it wherever you are. Eclipse glasses and materials to make pinhole projectors will be provided.

*During an eclipse, it is never safe to look directly at the Sun without specialized eye protection designed for solar viewing
