TIP OF THE WEEK

As the summer barbeque season gets underway, Dana Mordue, Ph.D., associate professor of pathology, microbiology and immunology, vice chancellor of accreditation and student support, and secretary of the Faculty Senate, reminds everyone that raw and undercooked meat and poultry can cause food poisoning. Most raw poultry contain Camphylobacter, Salmonella and other bacterium, while raw or undercooked meat may contain Salmonella, Escherichia coli or Yersinia. Thoroughly cook poultry and meat as bacteria is killed by cooking. Since you can’t tell if meat is properly cooked by looking at its color or juices, it’s best to look at the internal temperature. If you are serving potato salad or similar sides at your outdoor picnic, be sure you keep them on ice to prevent bacterial growth that can occur if they sit out at warmer temperatures.
