The heat is on this weekend and so are the season's first strawberries! We can't think of a better place to spend a summer-like Saturday morning than on the riverfront. Blue jean will supply some chill tunes, Green Vida will keep you feeling cool with their cold pressed juices and popsicles, De Novo Creamery is bringin' the ice cream, and Roastwell will be well stocked with lots of cold brew! The hot weather will have our farmers fields exploding with goodness so be sure to bring a few extra shopping bags. Speaking of bags... our limited edition '270th year' canvas tote bags make their debut on Saturday, along with two new t-shirt designs!

P.S. Thank you to everyone who shopped the market last Saturday and got the season off to a rip-roaring start. It was a great (and apparently mushroom-loving) crowd. Primordia Mushrooms set a record for their best day in Easton in their 10 year history!

We love our new home on Larry Holmes Drive, but it gets hot, hot, hot during the summer months! The Easton Farmers’ Market is seeking an energy efficient refrigerator/freezer where we can store water and ice for our awesome, hardworking volunteers. Meet the Mayor at 10:30am at the West Entrance of the Easton Farmers' Market, (the one closest to the Post Office).
Savoring the Spring: Rhubarb
Chicken with Rhubarb Sauce
Rhubarb. This tart tasting perennial pairs perfectly with strawberries, lending itself to tasty pies and pastries. We don't typically associate rhubarb with savory dishes, but when my good friend Alice raved about this fabulous Chicken with Rhubarb Sauce I knew I had to share the recipe with our market readers. Alice is not only a great cook, she's also the EFM's former assistant manager. She knows how to celebrate the flavors of the season, and with a beautiful patch of rhubarb growing in her own backyard, experimentation is a no brainer. Check out this sweet and tangy recipe here.

P.S. Alice tried to offer me some leftovers but when she opened the fridge, she quickly discovered that her hubby had polished them off! ;-)

These cooler spring time temps make the head lettuce happy and Salvaterra's super-sized heads of lettuce just keep rolling in! When we tell you they are almost as big as Salvaterra's five year-old daughter, we're not kidding! They have three varieties to choose from so you can enjoy scrumptious salads all week long.

Roastwell Coffee Roasters
Chris and Jamie say THANK YOU to all last week's market goers who made their first week at the market with nitro and cold brew coffee a rousing success!

Roastwell will be back at the market this week with lots of delicious drinks to keep you cool and caffeinated on the first hot day of the season.
And, of course, they'll have their incredibly fresh farm-roasted beans, both specialty and barrel aged, available to brew at home.

Pie + Tart
We are still deep in rhubarb season, and taking advantage of it with a new twist: a house made Strawberry Rhubarb Jam Crostata. Also coming to market are a Cheesy Rice and Chicken Strudel, a Sweet Potato Gratin Tart, Lemon Sponge Pie, and assorted small items…pop tarts, turnovers, hand pies, and all the et. cetera to make a delicious dent in the day. Cabbage Throw Romaine is back! The first romaine along with red and green gem romaines are ready for harvest this week! Mini gem romaines are perfect for a personal salad, a side salad for two or fun to cut in half and grill. Other salad fixings including head lettuce, spring mix, radish, and beets are fresh from the garden. Carrots, Daikon Radish, Stinging Nettle, Spinach, Rosie Bok Choy, and Cilantro are also available.

It was SO great to see Don's parents holding down the fort at Portch Tea last week. George and Melanie are legends in local agriculture, not to mention awesome human beings. And their son is pretty great too :) Don's Booch of the week will be: Ricardo Mintlebalm (mint and lemon balm) both of which are being harvested in the greenhouse this week.

Craving a Weekday Market?
A weekday market is returning to Easton! Many of you remember our Weyerbacher Wednesday Market which ran in Centre Square until 2015. And if you've lived in Easton long enough, you may even recall the 12th Street Market which operated in the City's West Ward 'back in the day.'
Well, on Wednesday June 1st the Easton Market District and West Ward Community Initiative are launching the West Ward Market!!!! This brand new neighborhood market will operate on N. 12th Street (between Paxinosa Elementary School and Cottingham Stadium) on Wednesdays from 3:00 p.m. - 7:00 p.m., June through September.

The new Market will be anchored by the Kellyn Foundation, a longtime provider of fresh food in the West Ward. Kellyn's 'Eat Real Food Mobile Market' will continue to offer produce from local farms, including Lafayette College's LaFarm and the Easton Urban Farm, along with many other local farmers and regional distributors. Kellyn will also offer Chef Amanda’s Lifestyle Medicine Meals, a healthy and very tasty plant forward alternative to the regular take-out meal options.

In addition to the Kellyn Foundation, the market will feature a a fabulous group of vendors including Windy Springs Farm (a vast selection of fruits and veggies, beef, roaster chickens, eggs, plants, cut flowers, jarred products and more), Made by Lino (sourdough bread, croissants, pastries, cookies, and vegan and Dominican specialties), Krakkus Polish Deli (pierogi, kielbasa, soups, chrusciki, cabbage & noodles, babka, poppyseed roll), Mediterra (organic, unfiltered extra virgin olive oil from their family farm Tunisia, balsamic vinegar, Mediterranean spices, rubs and condiments, olive wood crafts), Untamed Ferments (naturally probiotic beverages, including; kombucha, switchel, root beer, carbonated lemonade, kvass and nitro tea), and Bizzle's Bites (all natural healthy dog treats). You'll also be able to shop some of your familiar favorites like Jersey Pickles, and the Highmark Farmstand who will be featuring dairy products from Klein Farms. Mercantile Outpost and Zekraft will be doing pop-ups throughout the season, as will various local artists and crafters.

The West Market will feature music and events throughout the season including healthy eating activities for kiddos provided by the Easton/Phillipsburg Branch of the Greater Valley YMCA. Shoppers can also join bike rides with Community Bike Works at 4 p.m. each week. Easton Cycle will also offer pop-up cycling classes on the second Saturday of the month. And Easton Garden Works will feature food and farm activities, like flower crown making and scavenger hunts for kids, as well as pickling kits and seed starting workshops for adults. On the third Wednesday of each month — dubbed ‘Wacky Wednesday’— the YMCA will also provide zany activities for all ages. 

Like the other markets in the Easton Market District, the West Ward Market will accept EBT, as part of the Supplemental Nutrition Assistance Program. Thanks to a USDA grant through Buy Fresh Buy Local of the Greater Lehigh Valley, the market will offer LV Fresh Food Bucks, matching up to $10 per day on fruit and veggies purchased with EBT. EBT tickets and Fresh Food Bucks are valid at both the Easton Farmers' Market and West Ward Market.
